the cure for a deep freeze!

With a bleak and blustery day upon us, there was no question as to what to have for dinner. After raiding both the pantry and crisper a menagerie of elements were strewn across my island.
After a quick dice of two onions, a fine mincing of some garlic cloves and a rough chop of a carrot they were banished to my cast iron pot to begin to sweat down. While my veg was cooking away, some leftover ham was sliced up to join everyone in the pot, along with some luxurious organic split peas.
Once everything was thoroughly combined, some homemade chicken stock, water and salt was swirled in and the entire ‘soon to be’ soup was set to simmer away until thick and creamy!
As soon as the soup was ready, it was ladled lovingly into bowls, drizzled with some chili oil and topped with crispy noodles rather than croutons.
This meaty, slightly spicy and satisfying meal hit the spot and warmed us right up!

B-L-Totally Awesome!

So this past holiday weekend was a full-on baking extravaganza, chock full of bread loaves, buns and crumbles… The loaves and buns were whipped up using one of my favorite British cookbooks.
Since there was an abundance of homemade Sherston loaves in the house, I decided to slice up some heavenly chunks and do classic BLT’s for dinner!
After toasting up these lovely slices, a smear of mayo acted as the glue for building up these hearty sandwiches! Thick rings of juicy red tomatoes, crisp and cool leaves of romaine, along with salty, applewood smoked bacon brought this masterpiece together…
The juicy tomatoes oozed their gorgeous, sweet nectar and dripped down my lips as I savored each and every bite! Since one sandwich disappeared so suddenly, I am not embarrassed to say that an additional BLT made its way onto my plate and then into my belly…

under the sea and onto our plates!

After a trip to the specialty food market this AM for some dinner inspiration, I happened upon the fish counter… While looking around at what were some real beauties, I noticed that there were gorgeous handmade lump crabmeat, crab cakes being prepared! I have always made crab cakes in the past, but they weren’t even making it into the casing [people were buying them like they were gold] so I knew they must be a hot commodity and a must try…
To cook these thick, circular lovelies, a touch of olive oil in a cast iron pan and into the oven until browned and golden on each side!
Once cooked, these gorgeous ‘coins’ were rested on top a bed of baby spinach that I sautéed with some rendered pancetta…
The crab cakes were incredibly light, but full of intense flavor! They were definitely the right choice… Now I grasp why those people were intent on getting their hands on them!

tall, dark and…

On such a chilly night, the only thing I could think of having to warm myself up was a thick, luxurious, spicy hot chocolate.
Shards of chocolate were gently melted in a shallow pan of simmering milk and cream… everything was constantly whisked until completely smooth.
Once everything was melted, a nice hit of cayenne was added in to really bring home the spicy element!
Poured into tall mugs, this sultry and silky concoction was a perfect way to close out the evening… the cayenne gave a gentle poke in the back of our throats, while the chocolatey mixture soothed it all out!
Looking forward to the next wintery evening to enjoy another…

crisp and cool al fresco dining…

After a night full of delectable desserts, what better way to end the weekend than with an absolutely stellar weather day, a glass of wine [ok ok more than a glass] and grilling some beautiful pieces of meat!
Homemade corn relish, a vibrant green salad chock full of healthy add-ins, along with some thick, meaty goodness…
The relish was sweet and spicy, the salad… earthy and crisp, while the meat… well how better to describe than juicy and succulent with an intense meaty flavor that literally oozed with each perfect mouthwatering bite!
I’m looking forward to many cool, fall evenings of grilling and enjoying the outside weather, and being able to share them with all of you!

enjoying the fruits of summer…

Creamy, juicy, salty, sweet… those were some of the flavors experienced with tonight’s dinner! Rotund tomatoes sliced thickly were separated by chunks of luxurious, buttery fresh mozzarella which lined there way down a crisp white platter. For some added freshness and flavor, basil cut from my planters and Italian prosciutto purchased at my favorite local purveyor!
Everything was drizzled with a super sexy and delicious finishing oil.
I just love simple ingredients that can pack an exciting punch.

such a tease!!!

Granted today was supposed to be a washout in terms of weather, but once that sun starts peeking out you can’t help, but go into full-on summer mode! So now for the last few hours, the sun has played the hide and seek game and is starting to ride on our emotions…
I figured if it was warm and sunny, I’d throw some thick, juicy steaks on the grill, along with some fantastic asparagus and call it dinner. Who knows though… I don’t do jacket or umbrella grilling sessions so we will see later. For now though, I will continue to slurp down some drinks, listen to the wind blow and the birds chirp… all while thinking about nothing! That’s my kinda weekend…
