it’s a bit ‘chili’ in here…

So tonight I wanted something warm and hearty… something I don’t often venture into making… chili! This was not going to be a typical beef chili, but something with a slight edge to it.
I knew I had everything to whip up this stew-like concoction, so the mission began. I started by browning off hot and sweet bulk sausage. Once browned and gorgeous, into the pot went two spanish onions that I diced up. As soon as the onions became soft and a bit caramelized, in went a few cloves of garlic that I minced, along with some spicy green chilis! These all cooked together for a few minutes until the flavors started to marry.
After everyone was getting to know each other, in went cumin, ancho chili powder, cayenne pepper and salt [these are all to taste so go crazy or be gentle]… a quick stir to mix the spices and then one large can of crushed tomatoes and one large can of San Marzano tomatoes [these were puréed before I added them]. Another quick stir and as soon as the chili began to boil, then I dropped the heat to a simmer and put the lid on the pot. I let the chili cook for thirty-five minutes [twenty-five minutes into cooking I added a can of black beans…] Once cooking was finished, off the heat went in some chopped cilantro.
To plate up [or should I say bowl] this meal… some light and crisp tortillas, crème fraiche and extra sharp cheddar.
The flavors were intense… spicy, sweet, lemony and a touch acidic! This time two bowlfuls did just not satisfy…

not your usual ‘pie’…

Tonight we took a trip across the pond… a hearty shepherds pie was on the menu!
A gorgeous, meaty boneless leg of lamb was cubed up, salted and dusted in some flour… Into a hot cast iron pot coated with olive oil went the lamb! Cooked until all sides were beautifully browned and then put to the side while some carrots, celery and leeks were tossed in to soften up. Once softened, in went some garlic, tomato paste and then a hefty bottle of Guinness to start up this party! After the beer reduced down, the lamb went back into the pot, along with some fresh herbage and homemade stock. Then on went the lid and it was time to simmer everything for an hour until slightly thickened…
While the ‘stew’ was cooking away, it was time to prep the potatoes… yukon golds got a peel, dice and bath… after cooked, they took a ride through the food mill and then some mash was born!!
Once the stew was done thickening, the lid came off and in went a bag of frozen peas… cooked just until the peas were warmed thorough, it was then time to assemble this ‘pie’…
The ‘stew’ was layered in the bottom of a baking dish, while being tucked in by a fluffy blanket of the mash. Under the broiler until browned and bubbly, then it was time to eat!!
Piping hot and full of tummy-warming goodness… this is definitely a winning dish and perfect for a hungry crowd!

Making it through the market!

Feeling ravenous this morning… that feeling like when was the last time I ate?? To think, now I have to go to the market and mill around being teased by all of the treats yelling out my name [ok they really don’t yell, they are inanimate objects].
The idea of something homey and delicious for this weekend is skipping around in my head; perhaps a braise or a wonderful stew, but if nothing looks overly spectacular at the meat counter there is always pasta, but who knows yet… wish me luck!
