Summer Sunday supper!!

With Sunday supper on my mind, and finally some sunny [yet über humid] weather upon us I felt the need to marinate some sexy flank steak and then toss onto the grill! To serve up alongside, a beautiful tossed salad with a homemade balsamic dressing and some beautiful grilled asparagus.
The salad was just a mix of crisp romaine, sliced roasted red peppers, a diced shallot and homemade stuffed mozz! As for the asparagus, just a toss in some homemade infused olive oil and salt.
Once grilled and rested, the steak and sides were ready to eat up and enjoy… thrilled that there is a bit of leftovers for some lunch tomorrow!!

mexican flair…

Gosh I’m stuffed!! Tonight we went out for dinner and hit up one of our favorite Mexican restaurants. It is truly a hidden gem, that in recent times is becoming more and more visited.
We started off with a trio of fantastic appetizers… guacamole of course being one [I love the version they offer here], nachos [not served in the style many are used to] and an order of chicken quesadillas. Every bite was breathtaking and so eye-catching that I realized as I was stuffing my face that I forgot to get a full plate photo!! [forgive the close ups of the guac and quesadillas following]…
Onto dinner we went [I think we surprised the server when we ordered this course since the appetizers alone could have fed quite a few]… one dish was a skirt steak served in an adobo sauce, along with rice, refried beans and flour tortillas; the second dish was fried steak with onions served alongside black beans and rice…
The flavors were amazing and I honestly do not know how I was able to complete the entire dish, but then again I have never been one to back down from anything [meals included]!!

i’m feeling rice, rice, rice [and beans]…

Tonight on the menu was Spanish steak and onions served with rice and beans. The rice was made from a secret recipe, that I cannot share… what I can share is how absolutely incredible it was! A number of different flavors brought everything together and the outcome was, well delightful.
As for the steak and onions, I quickly pan seared the steaks that I sprinkled with adobo seasoning. Once browned, in the same pot I added onions, vinegar, olive oil, water, tomato sauce and salt to taste. When the liquid reached a boil, I reduced it to a simmer and put a lid on it and cooked until everything was tender.
This meal was filling and definitely required an appetite! Thank goodness I had just that…

surfboard optional…

So tonight I decided to prep up a surf n’ turf of some beautiful filet mignon and jumbo shrimp for dinner… minus the lobster!
Just some simple salt and pepper for the filet mignon, in addition to a screaming hot grill. As for the shrimp… minced garlic, crushed red pepper, old bay and olive oil.
The filet mignon was perfectly cooked and seasoned with gorgeous grill marks, while the shrimps were succulent and full of flavor! As a side, a fresh crisp salad tossed in a light lemon vinaigrette.
Each bite of the filet mignon was like butter and each shrimp… well reminiscent of a swim in the crisp blue ocean waters!
Speaking of crisp blue waters, maybe it’s time to jump in the pool…
