spring warmup!

So after realizing we are in for a pretty warm couple of days [especially tomorrow], I decided that grilling was the perfect way to truly welcome in Spring!
A trip to the local butcher this morning, yielded some beautiful, thickly cut steaks. I can almost smell the fragrant, smokey goodness that the grill offers once the meat hits those searing hot grates! My mouth is already watering in anticipation… dinner can’t come soon enough!!

green soup and ham…

Since I’m still taking it easy when it comes to food, I decided that a nice homemade split pea soup was the perfect meal.
After rinsing off some vibrant split peas, I cut up one onion and two cloves of garlic. The onion and garlic were sautéed in some olive oil until softened. Once softened, in went one quart of water, along with one quart of chicken broth, a bouillon cube and of course the stars of the dish… the split peas.
The soup was brought to a boil and then set to a simmer until the split peas began to open and thicken the soup. After tasting for seasoning, in went some cooked ham for an added smokey flavor and then it was time to plate, rather bowl up this warming goodness!
To top off this soup, homemade croutons made with some Italian bread, olive oil and a touch of sea salt.
The soup warmed us up on this chilly night, while soothing our tummies and giving us the nutrition we needed!

a meatless midweek meal…

So with a craving for breakfast all day, and the fact that today should be a ‘meatless’ meal… what better to have for dinner than fluffy, buttermilk pancakes.
To go alongside, yukon gold hashbrowns with onions and vibrant poblano peppers.
Since the pancakes were the star, I stayed true to just simple ingredients to create the best, cloud-like rounds…
To top off the pancakes, rich and luxurious maple syrup, along with a pat of butter.
The hashbrowns were golden and crisp, with a touch of smokiness and spice from the poblanos.
This was definitely a winner in my

book!

going vintage for the weekend…

To start off the weekend right, I decided to sit back and relax with a nice vintage cocktail, an old fashioned… silky, almost smokey bourbon created the perfect backdrop to this classic concoction! An orange slice was muddled with a small touch of agave nectar, bitters, cherry juice and a rotund little cherry. Gently stirred with a good bourbon topped off with a stemmed cherry and we were in business….

whoops forgot the cornbread…

So tonight was a Southern themed meal! On the menu… baby back ribs with a side of homemade slaw.
The ribs were glazed in a smokey bourbon sauce. Slow cooked on the grill [wrapped gently in foil and turning once] till cooked through and tender. These meaty little guys were fall of the bone good!
The side was full of vibrancy and zip! Shredded savoy cabbage amd carrots, mayo, champagne vinegar, salt, crushed red pepper and for a special something… dried cranberries. Creamy, tangy and full of flavor!
This dish may make an appearance again quite soon for a weekend meal…
