let the festivities begin…

Excuses mean squat… Therefore rather than apologies for being absent here I’ve decided to start off with a bang…Cinco de mayo lit a fire under my… or perhaps those were the jalapeños in the quesadillas we consumed???

Anyway you slice it, dinner was simple, classic fare that satisfied the hungriest bellies… and to wash it all down… mango margaritas!

So if you’ll excuse me I have some more drinks that require some tending to and a quesadilla that needs some loving…

Freshly baked beauty…

With a stormy day forecasted today and a very sick other half, I felt the need to stay put…
After playing chauffeur to the doctor, once home I decided to make a loaf of bread, from my favorite ‘bread man’ Paul Hollywood, that I haven’t made in quite some time. This loaf is absolutely gorgeous when baked, but just so simple to prepare…
A combination of bread flour, salt, yeast, olive oil and water was kneaded in my mixer until pulled together and completely incorporated. Once smoothed and slightly elastic, the dough was set to rise in a lightly oiled bowl. The first rise took roughly three hours… After that rise, the dough was ‘knocked back’ and formed into a cylindrical shape. The dough was placed on a sheet tray and covered for a second rise. For this rise, I allowed the dough to nap for another three hours to develop an even stronger flavor.
Upon completion of its second rise, a spritz of water, dusting of flour and four deep slashes prepared this beautiful ‘bloomer’ for its bake. The scent of fresh bread baking wafted throughout the house and made the urge for a warm slice inevitable! As soon as baking finished off, a crusty golden and luxurious loaf emerged, and so did a slice to make certain it was as delightful as I expected…
Tonight this enticing bloomer will get a nice toast and slather of Nutella for some naughty goodness!

Stacked with flavor…

A long day, yielded the will to make a delicious eggplant parm supper! After making a trip to a fresh vegetable market and picking up some plump purple lovelies, it was time to head home and start the prep work for what would be a delightful supper…
Everything started by making a big pot of sauce; it was then off to slicing the eggplants and then dusting each in flour, dipping in egg and a quick coating in breadcrumbs and it was then time to start frying.
After all was crisp, it was time to build up and create the perfect marriage… a layer of sauce, then eggplant, some grated pecorino and mozz, basil and then repeated…
A quick bake in the oven and it was time to sit down, sip a glass of wine, slice into and then enjoy!

like bees to honey…

After seeking high and low for lavender honey [everywhere I went was sold out], I decided the next best thing [and probably better alternative] was to make my own…
A quick trip to the health food store yielded some gorgeous dried lavender pods, in addition to some golden local honey.
Once home, I wrapped up about four tablespoons of the lavender pods in cheesecloth and placed the packet into two cups of honey that I set over a double boiler. Stirring frequently for about an hour, the outcome yielded an infused amber honey of pure lusciousness. After the honey cooled, it was time to jar up again.
The first recipe this scented wonder will be a part of is a lavender honey and almond bread. I cannot wait to sit back and enjoy a slice of this bread with a warm cup of tea…

B-L-Totally Awesome!

So this past holiday weekend was a full-on baking extravaganza, chock full of bread loaves, buns and crumbles… The loaves and buns were whipped up using one of my favorite British cookbooks.
Since there was an abundance of homemade Sherston loaves in the house, I decided to slice up some heavenly chunks and do classic BLT’s for dinner!
After toasting up these lovely slices, a smear of mayo acted as the glue for building up these hearty sandwiches! Thick rings of juicy red tomatoes, crisp and cool leaves of romaine, along with salty, applewood smoked bacon brought this masterpiece together…
The juicy tomatoes oozed their gorgeous, sweet nectar and dripped down my lips as I savored each and every bite! Since one sandwich disappeared so suddenly, I am not embarrassed to say that an additional BLT made its way onto my plate and then into my belly…

sunday night sweet tooth!!

To end the weekend on a sweet note, I thought a luxurious, slightly dense cake was in order! This was not just any cake, but rather a family favorite and old recipe passed down…
The cake has an interesting array of ingredients, including both pineapple and bananas, and is filled in/topped off with a silky cream cheese frosting coated in toasted coconut that just exudes sensuality.
Once it was ready to slice into and eat, the vision of heaven glimmered across the plates! With each bite of the cake, the desire to eat more and more became apparent… this was not going to be just a single slice of heaven, but rather the following day… a whipping on the treadmill!

say cheese[cake that is]…

After a fantastic holiday weekend full of spending time with family and friends, unfortunately reality is kicking back in…
To prepare for another week, what better way to gear up than with a slice of velvety caramel pecan cheesecake in a graham cracker crust!
Two packages of cream cheese, sugar, vanilla, eggs, pecans, caramel and a graham cracker crust [store bought or homemade, there are no judgements here!] are all that is needed to create this delightful masterpiece…
For the pecan caramel base, chopped pecans are stirred into a sultry caramel sauce and poured into the graham cracker crust… The cream cheese and sugar are whipped until combined, then the vanilla and eggs are added in and blended together. This creamy mixture is gently eased into the crust and then baked in a 350 degree oven until set. After cooling down and then chilling in the refrigerator, it was time to slice and enjoy…
Sweet, creamy, nutty and buttery… this slice of heaven is well deserved and for me guilt-free!!
