let the festivities begin…

Excuses mean squat… Therefore rather than apologies for being absent here I’ve decided to start off with a bang…Cinco de mayo lit a fire under my… or perhaps those were the jalapeños in the quesadillas we consumed???

Anyway you slice it, dinner was simple, classic fare that satisfied the hungriest bellies… and to wash it all down… mango margaritas!

So if you’ll excuse me I have some more drinks that require some tending to and a quesadilla that needs some loving…

a morning of glory [muffins]…

With the last few months pretty high on the emotions chart, it was a bit difficult to focus on much… Things are finally starting to ease back into normalcy and I thought was better to do than whip up a hearty batch of morning glory muffins for breakfast!
I had these luxurious little delights out in East Hampton and have been completely addicted since.
Chock-full-of delicious ingredients, these little domes of beauty are simple to prepare and the flavor element is incredible! For the recipe, two cups of flour, one cup of brown sugar, two teaspoons of baking soda and cinnamon, a half teaspoon of ground ginger and kosher salt are sifted and combined into a large bowl; in a separate bowl, three eggs, good vanilla, two-thirds of a cup of canola oil and one-fourth cup of orange juice are whisked together. Once the wet and dry ingredients are prepped, I cored one green apple and peeled four carrots. Both the apple and carrots were grated, and along with some coconut flakes, soaked golden raisins and wheat germ stirred into the dry mixture. As soon as everything was incorporated, I gently added in the wet mixture and mixed everything until fully combined and moistened.
The batter was scooped into a muffin tin and set to bake for twenty-five minutes at 375degrees. After cooling slightly it was time to rip open these spicy scented lovelies and enjoy with a silky cup of lady grey tea…
Couldn’t think of a better way to start off a weekday morning!

Guilt-free goodness…

With a craving for something healthy, yet decadent and delicious, I turned to a recipe from a dear friend whose website is chock-full-of informative ideas on leading a healthy lifestyle…
So the apple cinnamon protein muffins were the perfect way to go! Full of healthy ingredients: oat flour, pumpkin purée [not the sweetened kind], good vanilla, cinnamon, nutmeg, kosher salt, egg whites, stevia [I ran out and used Splenda for baking], whey powder, coconut oil and crisp granny smith’s!
The process of combining everything is pretty simple and only requires some pulsating in a food processor… Apples get the first few pulses until mostly puréed, but still slightly chunky. Then everything else is added in and given a whirl until brought together!
Spread out into a non-stick sprayed muffin pan, shot into a 350* oven and roughly twenty-five minutes later little devilishly good treats emerged… minus any potential guilt! So I ate one, and then another… who knows I may be making another batch before the day ends.
***Please note if you’re seeking cake like muffins you will need to incorporate baking powder/soda***

simple saturday supper…

So with Saturday night upon us, the question always arises… ‘What’s for dinner’. After a pretty exhausting day, and little desire to get dressed up to go out, I decided dinner would be home cooked!
A rich pasta ‘bake’ from one of my fave home cooks, Nigella Lawson… after looking through her newest cookbook, the whole wheat pasta with brussels sprouts, cheese and potato really stood out. I have made a dish like this in the past with some slightly different ingredients, but decided to give it a go…
The process is as simple, as simple can be… in one pot of boiling, super salty water the pasta, brussels sprouts and potato are cooked together. A slight amount of the pasta liquid is reserved before draining.
While the pasta is cooking, I cubed up some gruyere cheese and measured out some fresh ricotta. This lovely, creamy mixture was tossed with the drained pasta, brussels sprouts and potatoes.
After everything was coated, it was into a baking dish, drizzled with some oil, sage and a heavy hand of grated pecorino. Baked for roughly thirty minutes, then a slight resting period and it was time to eat!
The flavors all complimented one another and made me question… how could this possibly serve anymore than two??

kissing the ‘toad’…

So tonight we took a culinary journey ‘across the pond’ and paid homage to my family roots…
For an interesting dinner, we enjoyed ‘toad-in-the-hole’… may sound unappealing to those unfamiliar with this lovely dish, but don’t worry no toads were harmed in the making of this meal.
The dish is quite simple to prepare, basically everything that would be in your pantry and freezer. To make the batter, 2 cups of flour, salt, six eggs and 1 1/2 cups milk are all combined and set aside. Then sausages [can be any you like] are panfried and browned. The batter is poured into a pretty hot pan of oil, the sausages then nestled into the batter and everything tossed in the oven to bake until puffy, crisp and golden. To go along with the ‘toad’ a beautiful, homemade onion gravy.
The flavors are wonderful and rich, yet not heavy at all, but rather almost light as a cloud!

a meatless midweek meal…

So with a craving for breakfast all day, and the fact that today should be a ‘meatless’ meal… what better to have for dinner than fluffy, buttermilk pancakes.
To go alongside, yukon gold hashbrowns with onions and vibrant poblano peppers.
Since the pancakes were the star, I stayed true to just simple ingredients to create the best, cloud-like rounds…
To top off the pancakes, rich and luxurious maple syrup, along with a pat of butter.
The hashbrowns were golden and crisp, with a touch of smokiness and spice from the poblanos.
This was definitely a winner in my

book!

don’t get saucy with me!!

So today I decided on trying my hand at making my own new twisted barbecue sauce… Pretty simple, and pretty boozy!
To whip up this concoction, I used ketchup, tomato paste, brown sugar, molasses, honey, cider vinegar, dijon mustard, some hardcore booze, garlic, onions and a bit of spicy stuff for some zip…
I started by sautéing the onions and garlic, then added ketchup, water and tomato paste and simmered. After about fifteen minutes, I added the remaining ingredients, stirred, brought to a low boil and then back down to a simmer. I continued to stir frequently until thickened a bit.
Into a container to store and the rest as a marinade for tomorrow nights dinner… YUM!!!

‘scampi’ly clad…

What better way to finish off an incredible weekend than with an equally incredible [and shockingly simple] dinner!
Dinner literally took about fifteen minutes to cook and plate… beautiful, succulent shrimp were the key players in this dish, sautéed in an olive oil, butter and wine sauce.
I diced up a small [cannot emphasize small enough] red onion, minced some garlic and threw a healthy hand of crushed red pepper into and olive oil and butter bath to sweat it out. Once nicely sweaty and ripe smelling, I tossed in the shrimps and cooked until perfectly pink and tender! Once cooked, I pulled them out and let them hang around while I added some white wine, lemon juice and lemon zest to reduce down and slightly thicken the sauce. After reducing and cooking off, I added the shrimp back into the sauce, stirred in some chopped parsley and simmered gently to coat and heat through!
Served with some slices of bread to sop up everything and we were good to go!
