a morning of glory [muffins]…

With the last few months pretty high on the emotions chart, it was a bit difficult to focus on much… Things are finally starting to ease back into normalcy and I thought was better to do than whip up a hearty batch of morning glory muffins for breakfast!
I had these luxurious little delights out in East Hampton and have been completely addicted since.
Chock-full-of delicious ingredients, these little domes of beauty are simple to prepare and the flavor element is incredible! For the recipe, two cups of flour, one cup of brown sugar, two teaspoons of baking soda and cinnamon, a half teaspoon of ground ginger and kosher salt are sifted and combined into a large bowl; in a separate bowl, three eggs, good vanilla, two-thirds of a cup of canola oil and one-fourth cup of orange juice are whisked together. Once the wet and dry ingredients are prepped, I cored one green apple and peeled four carrots. Both the apple and carrots were grated, and along with some coconut flakes, soaked golden raisins and wheat germ stirred into the dry mixture. As soon as everything was incorporated, I gently added in the wet mixture and mixed everything until fully combined and moistened.
The batter was scooped into a muffin tin and set to bake for twenty-five minutes at 375degrees. After cooling slightly it was time to rip open these spicy scented lovelies and enjoy with a silky cup of lady grey tea…
Couldn’t think of a better way to start off a weekday morning!

my twist on a classic…

With a soaking rain wreaking havoc on the day, I decided that it was the perfect excuse to bake up an amazing cheesecake!
I had been experiencing a severe craving for the creamy and luxurious dessert, and thought it would help lift my spirits to whip one up.
This cheesecake was different from your typical variety, as I used both cream cheese, along with goat cheese for an added tang and fuller depth of flavor.
The basic elements still went into the baking process, however I added gorgeous vanilla bean seeds in for a beautiful speckle and flavor, as well as a special homemade vanilla sugar.
The silky mixture was poured gently into a homemade graham cracker crust that I molded into my springform pan… It was then into the oven for roughly an hour until perfect.
Once cooked, it was time to set up and then take a doze in the fridge to really come together… As soon as the cheesecake was ready to be sliced, there was no stopping the diminishing that became evident!
The crisp and buttery crust hugged the velvety smooth mixture and just added to the sinful act that was occurring… I’m fine with committing that sin, and there will be no confession from me!

getting ‘curried’ away!!

So for tonight, something super aromatic and flavorful made its way onto our plates and into our bellies!
A curried pork dish served on top of coconut rice…
The dish started by sautéing a paste made up of ginger, garlic, onions and crushed red pepper flakes in some canola oil. Once highly fragrant, into the mix went some cubed pork loin cooked till slightly brown. As soon as the pork was browned, silky coconut milk was swirled in, along with a sachet of cardamom pods, star anise and lemongrass, then the lid placed on and a steam bath was had! After roughly forty-five minutes, the lid was removed and some brown sugar, salt, soy sauce and some shredded coconut was stirred in. This was all simmered until practically no liquid remained and the pork was as tender as could be…
As soon as everything was ready to be plated, we were just as willing to dive in with our forks! Sweet, spicy and a bit tangy… this dish had it all!

sunday night sweet tooth!!

To end the weekend on a sweet note, I thought a luxurious, slightly dense cake was in order! This was not just any cake, but rather a family favorite and old recipe passed down…
The cake has an interesting array of ingredients, including both pineapple and bananas, and is filled in/topped off with a silky cream cheese frosting coated in toasted coconut that just exudes sensuality.
Once it was ready to slice into and eat, the vision of heaven glimmered across the plates! With each bite of the cake, the desire to eat more and more became apparent… this was not going to be just a single slice of heaven, but rather the following day… a whipping on the treadmill!

sweetheart dinner…

On a day when one professes their love, sends bouquets of roses and boxes of chocolate, I displayed mine with the gift of food…
Instead of a night on the town [don’t fret that is already planned], I decided on preparing a pan seared duck breast and sautéed brussel sprouts paired with an incredible bottle of red wine. To finish off this luxurious meal… homemade meyer lemon mousse topped with crushed amaretti cookies!
The duck was perfectly cooked and beautifully tender, the ‘sprouts’ crisp and full of flavor, but we all know the most important part of the meal… the dessert! The mousse was silky and seductive, each bite transported us to another realm… no denying it took some work to prepare, but it was worth every effort… [so happy I made extra]

we’re all entitled to some decadence…

To start the week off right, it was best to do it on a sweet note!
A whiskey chocolate tart topped off with luxurious, homemade whiskey whipped cream…
The tart was made using a cookbook I received as a Christmas present. I adapted it from one large tart into mini-personal sized ones.
The crust was made using shortbread cookies, sugar, salt and some melted butter. The cookies, sugar and salt are pulsed in a food processor, and then the melted butter stirred in until everything was incorporated. Pressed into the mini tart pans, the crust was cooked till just before browned…
While the crust cooled down, some milk and heavy cream were heated. Once hot, but not boiling, off the heat chopped milk and dark chocolates were whisked into the milky mixture until smooth.
In a separate bowl went some flour, an extra-large egg [plus an additional yolk] and some whiskey! Everything was beat together and then added into the chocolate mixture and whisked until combined.
The silky, chocolatey mixture was eased into the cooled shortbread crusts and popped into the oven and baked until slightly set, but wiggly in the center.
To finish this story, a hefty dollop of the homemade whipped cream and it was time to begin eating! Rich and decadent, full of chocolatey goodness… this was truly a spectacular dessert!

looking forward…

It may be bitterly cold outside, but it is toasty warm inside. So with a hot cup of silky hot chocolate [all dolled up with a creamy dollop of whipped cream] in hand, I decided that in preparation for the new year and the idea of making many new and exciting recipes, I dug out some of my favorite old cookbooks and read up on some recipes that have not made it to my dinner table yet.
In addition, I thought of perhaps attempting a slight format change in regard to postings… rather than just talking about dinners and desserts, evenings out, etc., I am going to try and share candid shots of interesting elements that may appear when I visit specialty food markets, favorite kitchen supply stores, wine stores, farmers markets, as well as talking about seasonal fruits and veggies [and a recipe that goes along with each].
This will all be a gradual process, but the thought of trying to move in an exciting new direction makes me yearn to share even more with those who have all been there since the blog went live!
So with that I wish everyone a very Happy New Year and look forward to sharing with and hearing from everyone in 2013!

Party platter… for two!

It has been a while since a beautiful platter of creamy, fresh mozzarella, ripe tomatoes, vibrant basil and salty prosciutto has made an appearance across our vast island…
So I decided that would be just what we would be enjoying tonight! The silky, milky fresh mozz and salty prosciutto came from my favorite Italian specialty shop, while the basil and tomatoes from our local market.
I sliced the tomatoes and fresh mozz just thick enough, and dotted the platter with the basil and prosciutto… To finish off the platter, some fleur de sel and freshly ground pepper.
Two hearty loaves of Italian breads got sliced up [one seeded, one seedless… that’s how we roll in this house] and it was time to enjoy!
A gorgeous, rich finishing oil and balsamic reduction were used to just drizzle across these little beauties and enhance the flavors, yet not steal the show…

sourpuss…

I’ve been called sweet, but this afternoon a bit of my sour side came shining through. I had a craving for a smooth lime custard so I decided to grab a few beautiful limes and make it happen.
Lime juice, some zest, eggs, butter, a pinch of salt and some sugar were combined in the mixer. Once mixed, it was onto the stove to cook and thicken… After thickening nicely, it was off to chill and set up… This will eventually turn into a luxurious and silky pie at some point this weekend! I’m looking forward to that tangy and sweet filling, complimented by a fluffy cloud-like topping and crunchy base, but for now it is going to be delightful on some toasted bread with some tea.
