spicy dinner for a chilly night!

With a recently found liking for sockeye salmon, I thought about mixing up our weeknight dinner and preparing a refreshing recipe that my cousin mentioned to me…
I rubbed some extra virgin and then seasoned one and a half pounds of sockeye with a mixture of kosher salt, cumin, paprika, chipotle chili powder, freshly ground pepper and onion [or garlic] powder [1 teaspoon of each, except 1/4 teaspoon of the chili powder]…
The fish was set in the fridge for a bit to soak up the lovely spicy flavors, while I prepared some steamed haricots verts to enjoy as a side. These were nothing fancy, steamed and then tossed lightly with some olive oil and a pinch of crushed red pepper flakes.
To cook the salmon, I heated a grill pan on high and once smoking, in went the fish [skin-side down] and cooked for roughly 8 minutes [cooking time varies depending on heat, as well as your likeness for doneness]… Once finished cooking a squeeze of fresh lime juice elevated this dish nicely! It was then onto our plates and then into our bellies…
I have been converted and think anyone who tries this will be too so I say… give it a go!

a good roasting!

With today being quite the dreary Sunday [both because it’s the day before the beginning of the week and also because it was gray outside], I decided to do as much cozying up as possible… couch, wine and movie]. To accomplish this feat, a simple roast chicken dinner seemed the easiest thing to come out of the kitchen!
Seasoned with some olive oil, freshly squeezed lemon juice and herbs de provence… this meaty bird was nestled into the oven for an hour and half to get its tan. During the last thirty minutes of cooking, our fragrant meal was treated to a splash of white wine to elevate the already flavorful treat! Once finished cooking, the chicken rested for a few minutes before getting plated and filling our bellies with satisfying warmth…
Till our next dining experience!

cinco of my own…

This cinco de mayo was just for UNO… with an under-the-weather other half, two meals were prepared… one for me and one him!
In typical fashion for cinco de mayo, what better to do than whip up something for this festive occasion. The thought of chicken fajitas topped with some homemade guacamole came to mind!
I started sautéing an onion and poblano peppers until slightly softened, but still crisp [which I then set aside]. In this same pan, I pan-fried some marinated chicken that I sliced into strips. Once cooked through, I added back in the onion and peppers, along with some black beans and gave a quick toss!
A healthy heaping of the chicken mixture went into a warmed flour tortilla, as well as some grated monterey jack cheese and guac…
To enjoy this beautiful dinner and bring everything together, a squeeze of fresh lime juice. The lime juice gave a citrusy freshness that paired perfectly with the crisp, slightly spicy poblanos and deliciously seasoned chicken…
So happy I have some leftovers for lunch tomorrow!!

it’s still a bit brisk[it] outside…

So for a weekly Sunday supper, the dish started with a beautiful beef brisket that I seasoned with salt and dusted lightly with flour. This hunk of meat went into my cast iron pot to get a beautiful crunchy crust!
Once the brisket was browned, I pulled it out and placed it to the side while two Spanish onions got their own workout in the same pot and sweated it out… as soon as the onions were ready to ‘hit the showers’, the brisket went back into the pot and joined them, along with a bottle of root beer and some homemade BBQ sauce.
With the brisket partially submerged, on went the lid and it was time for a long relaxation period until the meat was tender and fall-off-the-bone[less]!
The brisket was shredded up, tossed back into the pot and mixed with the onions and sauce…
To go along with our shredded brisket ‘burritos’, a side of arroz con crema! Such a simple rice dish to prepare, but the flavor is out of this world… you combine four-five cups of prepared rice, diced poblano peppers [I roast mine on the grill], panfried corn [grilled during the summer months] and one cup of heavy cream. This all is stirred until it starts to ‘thicken’, then in goes shredded monterey jack and cojita cheeses. Lastly chopped cilantro is quickly incorporated and it’s on to eating! [I tend to not add salt… I know I know, but the cheese I feel offers enough]…
Piled high into the center of a light tortilla, dolloped with a hefty helping of homemade coleslaw and then a final tight roll! It was time to bite into this fragrant and tangy ‘burrito’. The flavors burst in our mouths and the coleslaw balanced out the slight heaviness of the brisket; this was just a wonderful Sunday evening dining experience!

here’s the real touchdown!

On a day when everyone is glued to the tv and eating snacks, hot wings and pizza, I on the other hand have zero interest in that. Instead, I decided that with a fresh coat of snow on the ground, why not make a juicy, succulent roast beef…
A five pound, slightly marbled beauty was seasoned with salt and pepper, topped with red onions [had on hand and wanted to get rid of, usually I use a large Spanish onion], drizzled with some champagne vinegar and then packaged tightly in aluminum. This soon to be meal was already looking amazing!
Into an oven safe dish with some water up the side, and it was time for a three hour nap in the oven…
As the three hours passed, the scent of onions and roast beef wafted throughout the entire house… there was no escaping the intoxicating aroma!
Once pulled out of the oven, a quick rest and it was finally time to slice and enjoy…

meat and potatoes…

So what better way to warm up on a chilly night than with a hearty bowl of beef stew piled high atop creamy and oh so delicious yukon gold mashed potatoes!
I started by browning the meat [tossed with flour and seasoned with salt]… once browned the meat was set aside and some new olive oil went down into the pot! Then in went six carrots and celery, along with four leeks that I chopped up. Some more salt and a bunch of stirring helped soften the veggies and also scrape off the yummy goodness that formed on the bottom of the pot! After the veggies were smelling amazing, in went some chopped garlic [go crazy] and a can of tomato paste… some additional stirring ensued until the paste almost melted away and just offered a beautiful richness in the pot!
Next came one of my favorites… two bottles of Guinness [stirred and reduced]. Once reduced, the meat went back into the pot and was covered with a quart of chicken stock, four bay leaves and a bundle of thyme!
Brought to a boil and reduced to a simmer, this lovely concoction cooked away for a little over an hour…
The last thing to do?? Plate over some velvety yukon gold mashed potatoes and enjoy like ravaged beasts!

latke love…

So to join in on the holiday festivities of some friends, I decided to create a light meal of latkes and homemade applesauce.
The latkes were a combination of potatoes [grated in the food processor], salt, freshly ground pepper, eggs and flour. These needed to be seasoned appropriately to make sure they didn’t taste like cardboard. Everything was combined by hand and then spooned into a hot, non-stick pan with butter. Each latke was cooked until browned and then flipped until the other side was also browned. Total cooking time was roughly five minutes per side… Once browned, the latkes were placed into the oven on a low temp to keep warm.
For the applesauce, I used four Honeycrisp apples that I peeled and cored. Into a cast iron pot they went, along with four tablespoons of butter, 1/4 cup of brown sugar, a pinch of salt, some freshly squeezed lemon juice and orange juice, a secret spice [sorry can’t tell you that, but you can add some cinnamon] and a teaspoon of vanilla… The pot went into the oven covered for about an hour and a half until the apples were softened and could be easily mashed…
After everything was said and done, it was time to sit down and enjoy! This special meal was well received…

this little piggy went right into my belly…

Realizing it has been such a long time since I’ve enjoyed that fatty, porky goodness of pork belly, a trip to the market and an overnight bath in a fragrant marinade yielded one hell of a dinner!
I seasoned up this beautiful slab with hefty handfuls of salt. While letting the salt permeate into the belly, I prepped a marinade full of healthy veggies and yummy seasonings… and of course wine was invited to this party!
Once the marinade was ready it was poured into a baking dish. The belly was then cozily tucked into the baking dish and surrounded by its luxurious bathing liquid… After a long nights sleep, it was time for a five hour bath until completely tender and a quick tan under the broiler to darken and crisp that fatty skin!
To enjoy this meal, the belly was nestled on a bed of nutty farro that I cooked with sautéed onions and garlic in some chicken stock until fully absorbed… the farro was swirled together with some chopped parsley to finish the story…
Fatty, crisp, sweet, sour, nutty and tender… I can go on and on!

the big day, full of big flavors!!

The last few days have been filled with preparation for the Thanksgiving holiday… numerous runs to the market, prep work of some appetizers, as well as the big important part… the turkey!
The appetizers were endless… fresh mozz and tomato, stuffed mushrooms, marinated artichokes, along with a variety of others…
The main course was equally as vast! A nineteen pound turkey that was seasoned with my special ingredients [as well as ALOT of butter], fluffy stuffing, sautéed carrots, mashed potatoes, various sweet potato dishes, brussel sprouts, cauliflower sautéed in garlic and oil, as well as quite a few more…
After a quick cleanup and resting period, it was time for dessert… where oh where was one to put these?? Homemade pumpkin pie, coconut custard, a pecan cheesecake, cakey pumpkin chocolate chip cookies, cream puffs and an apple pie…
Stuffed is not a word to describe exactly how I’m feeling now, but once a year it’s acceptable and allowed!

rollin’ with the flavor… AGAIN!

Tonight’s dinner was a fun favorite that usually is ordered as part of take-out Chinese, but this evenings nosh was served up from scratch.
The all mighty egg-roll, the perfect mix of hearty veggies and chicken encased in a crunchy shell.
The ingredients were simple… red onion, red pepper, celery, garlic and ginger, shredded carrots and savoy cabbage, chunks of seasoned chicken and creamy sliced avocado.
After a quick sauté of the red onion, celery and red pepper, I tossed in the ginger and garlic until incorporated, then cooked the chicken alongside everything! Once cooked, I mixed in soy sauce and sesame oil to taste…
Once this fragrant combo was done, they were sealed up snuggly in egg-roll wrappers… One little bit of advice, don’t over stuff the egg-roll, otherwise you will have cracks and it won’t hold together when frying.
After a quick fry just to get that beautiful golden outside and it was time to eat!
