spicy dinner for a chilly night!

With a recently found liking for sockeye salmon, I thought about mixing up our weeknight dinner and preparing a refreshing recipe that my cousin mentioned to me…
I rubbed some extra virgin and then seasoned one and a half pounds of sockeye with a mixture of kosher salt, cumin, paprika, chipotle chili powder, freshly ground pepper and onion [or garlic] powder [1 teaspoon of each, except 1/4 teaspoon of the chili powder]…
The fish was set in the fridge for a bit to soak up the lovely spicy flavors, while I prepared some steamed haricots verts to enjoy as a side. These were nothing fancy, steamed and then tossed lightly with some olive oil and a pinch of crushed red pepper flakes.
To cook the salmon, I heated a grill pan on high and once smoking, in went the fish [skin-side down] and cooked for roughly 8 minutes [cooking time varies depending on heat, as well as your likeness for doneness]… Once finished cooking a squeeze of fresh lime juice elevated this dish nicely! It was then onto our plates and then into our bellies…
I have been converted and think anyone who tries this will be too so I say… give it a go!

refreshing dinner on a hot day…

With this oppressive heatwave still upon us, there was no way I was turning on the range or even the grill for that matter! Instead I thought it best to make some fresh pesto and have a refreshing sandwich night full of yummy things.
After making the pesto, it was time to assemble these pockets of delight… A healthy spread of the pesto adorned the lightly toasted ciabatta, followed by some spicy arugula, slices of fresh mozz and of course some phenomenal prosciutto di parma!
With the lid closing down snuggly and making this vessel ready for the feeding, there was not much more to do than succumb to it’s will…
A slight bite from the arugula, saltiness from the prosciutto, creamy from the fresh mozz and just an overall freshness from the pesto made this sandwich the perfect compliment to an über hot July evening!

that’s how the ____ crumbles!!

After enduring a rainy day, I decided to lift my spirits and make a refreshing crumble for dessert tonight. On a trip to the market, vibrant rhubarb peeked out of the wicker baskets and with their long stalks practically reached out for me!
Once home a nice cleaning, a quick chop and then a toss into a pan with sugar, vanilla and butter. As soon as everything was coated, it was cooked until the rhubarb became almost a glossy pink. Into miniature pie dishes went the filling, while to tuck these beauties in, a tasty crumble made up of flour, butter, brown sugar, salt and vanilla sugar. The crumble mixture was combined by hand until it achieved an almost oatmeal-ish texture, but where the butter still was somewhat together…
The crumbles went into the oven for roughly thirty-five minutes until the topping was golden and the insides were slightly bubbling… the rhubarb bubbling out and cascading down the sides made the excitement for digging in even more appealing!
The crumble was crispy and buttery, while the rhubarb filling had a lovey balance of sweet, but let the minute tartness steal the show…

the winter blues… turned vibrant green!

To move the focus off of this last [hopefully] winter storm that is upon us, I decided that something light, summery and refreshing was perfect for dinner…
After a quick dash to the market; fresh basil and pignoli nuts made their way into my bag, along with some cozy snow time treats.
Once home, I plucked the basil leaves from their stems, gave them a quick rinse under the tap and set everything aside to dry off a bit.
While the fragrant basil leaves were drying, into a food processor went some pecorino to get pulsed up until grated.
To bring everything together and make an amazing pesto, into my food processor went the basil leaves. Everything was pulsed up, along with a quite a few cloves of smashed garlic, the pignoli nuts [that I toasted lightly], some of the freshly grated pecorino, salt and pepper.
While pulsing everything, a steady drizzle of high quality olive oil really pulled [literally] everything together!
The vibrant green pesto was lovingly tossed with delicate tagliatelle and an extra sprinkle of the grated pecorino…
Each mouthful transported me from the cold and windy nonsense going on outside, to what summer has to offer us in the not so distant months to come!

a perfect reason for a glass of vino…

What better way to spend a Sunday afternoon than outside amongst the sun and birds relaxing by our pool with a crisp, refreshing glass of wine…
Plump, gorgeous red seedless grapes are the perfect seductive accompaniment to the zip of the light and fruity wine…
As I sit, I’m left to ponder what delightful dish should come out of the kitchen this evening… it almost feels like it should be something hearty and homey… perhaps some gorgeous, thick filet mignon accessorized with fresh greens or a puddle of yukon gold mash? Hmmm or perhaps both…
To be able to pass the hours along with not a care in the world is just what everyone should be able to do on a weekend!
