love in every bite…

With Valentine’s Day being on a Saturday this year, it was perfect to do something a bit different from years past… This meant making the entire experience a dual effort!
The day started by preparing our chocolatey dessert. Chocolate bowls were made, a chocolate sponge cake baked off, black cherries steeped in a sugary sauce and a creamy whipped topping all ready to be consumed later in the evening by the fireplace!
Our dinner was simple yet delicious; filet of beef wellingtons! It began by seasoning and searing the filets. Then red onions were sautéed in some luxurious European butter and cognac. This was then puréed into a slightly chunky ‘paste’. Each filet was then given a spread of dijon mustard, a nice dollop of the red onion paste, placed onto puff pastry and then covered over with a top layer of pastry. A brush of egg wash, tiny slit in the top and it was off to the oven for twenty-five minutes… When the wellingtons finally emerged, they were golden, puffy and full of lush flavors!
The day, as well as cooking/baking went off without a hitch… a day of romance, wonderful eats, champagne, snow and a fireplace! What more could we have wished for?

one [roasting pan] wonder…

After a long day of running errands and battling the cold weather, it was home to prep up something for a scrumptious dinner! I needed something satisfying and filling, while not taking hours and hours to prepare. Simple enough was one of my fave dishes, from one of my fave home-cooks… Nigella Lawson. It was a chicken, chorizo and potato ‘bake’. This dish is literally a ‘one pot’, rather ‘one pan’ meal! Simple ingredients that everyone has in their kitchen pantry and can be put together in mere minutes.
Into a deep roasting pan went some good extra virgin which coated both sides of a healthy portion of chicken thighs, chopped up fresh chorizo, large diced red onion and cubed yukon gold potatoes! A sprinkling of dried oregano, a scatter of salt, a grating of the zest of a clementine and it was into the oven on 425 for one hour. As the ‘bake’ cooked in the russet beauty from the oil and chorizo, the scent of oregano, citrus and spices wafted throughout.
After the cooking time was up, out appeared a bronzed, crisp chicken, seductively aromatic chorizo, browned potatoes and wilted red onion. No sooner did I take this breathtaking beauty out of the oven, that we were plated up and diving in!
This is one of my go-to recipes, and chances are if you try this it will become one of yours as well!

sicilian street food!!

To finish off a stellar weekend, we decided to whip up some ‘panelle’. [Panelle happens to be an extremely popular street food served in Sicily.] We haven’t made them in quite some time, but that craving hit pretty hard. These crisp and flavorful beauties do require some serious elbow grease, but the end result is entirely worth it! Using an age-old and very secret family recipe, these fluffy pillows of goodness are made using chickpea flour. Once fried until perfectly golden, they are sandwiched on a roll with some sliced tomato and red onion! The hardest part when making these puffy fritters… not eating the entire tray…

a feast for Sunday dinner…

The craving for something filling and ‘feast-like’ crossed my mind while meandering through the market… with winter in full effect this past week, I thought something reminiscent of a family gathering style would do wonders for a Sunday supper!
After picking up a fresh turkey breast, some carrots, fennel, celery and herbs… all that was left to do was start to prep up this soon to be masterpiece.
Slathered in a homemade buttery ‘sunscreen’ coating and rested on a bed of sliced carrots, onions, fennel and celery [all puréed together after cooking] it was going to be just a few hours of cooking until this meal would be ready for eatin’…
While cooking this ‘bird’, I thought some interesting cornbread muffins would be a great compliment instead of biscuits! These weren’t just your typical boring cornbread muffins, but one with a kick. One large jalapeño, some diced red onion, garlic, corn, red pepper and of course cornmeal all were stars in what would become a great treat!
Lastly, this meal would not be complete without some mashed, garlicky potatoes! Yukon gold potatoes were cooked to perfection and then mashed together with some butter, milk and of course salt and pepper.
Each bite brought me back to having the family here for the holidays and enjoying everyone’s company!

rollin’ with the flavor… AGAIN!

Tonight’s dinner was a fun favorite that usually is ordered as part of take-out Chinese, but this evenings nosh was served up from scratch.
The all mighty egg-roll, the perfect mix of hearty veggies and chicken encased in a crunchy shell.
The ingredients were simple… red onion, red pepper, celery, garlic and ginger, shredded carrots and savoy cabbage, chunks of seasoned chicken and creamy sliced avocado.
After a quick sauté of the red onion, celery and red pepper, I tossed in the ginger and garlic until incorporated, then cooked the chicken alongside everything! Once cooked, I mixed in soy sauce and sesame oil to taste…
Once this fragrant combo was done, they were sealed up snuggly in egg-roll wrappers… One little bit of advice, don’t over stuff the egg-roll, otherwise you will have cracks and it won’t hold together when frying.
After a quick fry just to get that beautiful golden outside and it was time to eat!

plump and juicy…

Tonight I used the gorgeous, plump tomatoes that I received in my weekly CSA basket!
Just a simple tomato salad made up of sliced red onion, some salt and olive oil… that was it!
The chunky tomatoes played beautifully against the red onion and provided a lovely sweetness to the light spice from the red onion…
How I hope next weeks basket has much of the same!!

‘scampi’ly clad…

What better way to finish off an incredible weekend than with an equally incredible [and shockingly simple] dinner!
Dinner literally took about fifteen minutes to cook and plate… beautiful, succulent shrimp were the key players in this dish, sautéed in an olive oil, butter and wine sauce.
I diced up a small [cannot emphasize small enough] red onion, minced some garlic and threw a healthy hand of crushed red pepper into and olive oil and butter bath to sweat it out. Once nicely sweaty and ripe smelling, I tossed in the shrimps and cooked until perfectly pink and tender! Once cooked, I pulled them out and let them hang around while I added some white wine, lemon juice and lemon zest to reduce down and slightly thicken the sauce. After reducing and cooking off, I added the shrimp back into the sauce, stirred in some chopped parsley and simmered gently to coat and heat through!
Served with some slices of bread to sop up everything and we were good to go!

not your everyday ‘salad’…

Tonight was a great night! A visit from a wonderful friend who we haven’t seen in quite a while yielded a night of laughter, great food and drinks. Originally planned was a grilled meal, alongside an edamame and tomato salad. Unfortunately do to a long passing storm, grilling was pretty much out of the question however the salad not so much!! Simple to put together and beautiful for the eye to see… grape tomatoes, a red onion and shelled edamame. That’s it!!
Refreshing, light and full of flavor this salad could be a meal on its own!

Summer and sandwiches…

What better way to enjoy a hot summery afternoon than with a meaty delicious Italian classic sandwich…
Full of Italian ham, salami, provolone, shredded lettuce, sliced red onion and doused with a flavorful oil and vinegar dressing all tucked into a fresh baked roll!
The sandwich was crunchy from the lettuce and red onion, tangy courtesy of the dressing, slightly sweet from the ham with a complimenting bite from the sharp provolone.
Normally I cannot finish an entire sandwich, but there was no way I was letting this one slip by… it had no chance!

Spiraling out of control!!

Grilled spiral sausage with sautéed onions and peppers made its way onto our plates tonight! What was a pretty decent afternoon in terms of weather sort of dictated the idea of grilling, but as the sun started to turn in for bed the chill came back out to play… YIKES! Well I’ve grilled in colder weather so why change plans?? The smokey smell as the spiral sausage grilled away just let me know what we were in store for when it was time to dive in. The peppers and onions paired well with the parsley and cheese spiral sausage. Vibrant flavors gave the dish a wonderful edge!
As a nice refreshing and crisp side dish, I decided a fresh romaine salad tossed with sweet cherry tomatoes from the farm, finely diced red onion, diced fire roasted red peppers and cubed fresh mozz. Everything was mixed around gently in a homemade blue cheese dressing. Creamy, tangy and crunchy, as well as sweet and slightly acidic…
I just love Sunday dinner!
