just feeling a little nutty…

Feeling in the mood for a snack, I thought what better to do than whip up some roasted nuts!
Cashews, pecans and almonds were tossed with some canola oil, brown sugar, karo syrup, spicy chili powder, salt and minced rosemary. [You can play with how savory, spicy or sweet works for you]
Everything went onto a baking sheet and into the oven for twenty minutes [tossing once while cooking].
Once cooled [ok hard to do] it was time to enjoy!

say cheese[cake that is]…

After a fantastic holiday weekend full of spending time with family and friends, unfortunately reality is kicking back in…
To prepare for another week, what better way to gear up than with a slice of velvety caramel pecan cheesecake in a graham cracker crust!
Two packages of cream cheese, sugar, vanilla, eggs, pecans, caramel and a graham cracker crust [store bought or homemade, there are no judgements here!] are all that is needed to create this delightful masterpiece…
For the pecan caramel base, chopped pecans are stirred into a sultry caramel sauce and poured into the graham cracker crust… The cream cheese and sugar are whipped until combined, then the vanilla and eggs are added in and blended together. This creamy mixture is gently eased into the crust and then baked in a 350 degree oven until set. After cooling down and then chilling in the refrigerator, it was time to slice and enjoy…
Sweet, creamy, nutty and buttery… this slice of heaven is well deserved and for me guilt-free!!

Closing time…

Another outrageous evening for dinner! We closed that joint down… LITERALLY! Time really does fly when you are chatting away and enjoying yourself.
As an appetizer, we did a family-style setup. Fried calamari tossed in a balsamic glaze [AMAZING], sautéed shrimp in a spicy lemon butter sauce, as well as a hearty vibrant arugula salad with pears, Parmesan shavings and candied pecans! All delicious and different in their own special ways.
As mains; a spicy chicken arabiata with hot peppers in their vinegary goodness, grilled flank steak topped with shrimp, grilled sea bass and an always classic chicken marsala! Everything was delicious as our table went quiet as we savored each luscious bite…
For dessert… we all shared a peanut butter tartufo. One word… DIVINE! Silky and smooth, creamy and a slight bit salty. I need another right about now! Well maybe I can try and make one soon… hmmmm
