what are you bananas!!

With a few bananas remaining from the cake I made this past weekend, I decided rather than tossing then out they’d do better mashed up into a wonderful banana bread! This wasn’t just any banana bread, but rather a boozy banana bread…
I soaked sweet little golden raisins in some delicious bourbon. Once plumped up and juicy, they went into my batter that was full of the mashed bananas, chopped pecans, vanilla, two eggs, one cup of flour, two teaspoons of baking powder, a half teaspoon of baking soda and salt, one stick of melted butter and sugar.
Once everything was combined, it was into a loaf pan and then off for a nap for fifty minutes on 325. After a quick test for complete doneness, I had to taste! There was very little willpower, but tasting this freshly baked beauty was a necessity. Served up with some vanilla-infused mascarpone made this luxurious delight even more spectacular!
The boozy raisins offered a wonderful addition to the sweetness of the bananas. This definitely will be on my breakfast menu tomorrow!

rice and roll…

Between market runs for Thanksgiving necessities and starting our Christmas decorating, who had the time to cook! A nice evening out was just what we needed anyway… great company is what made it even more impressive and exciting!
On the menu, but more importantly on our plates was a phenomenal array of Japanese fare… sushi rolls, tempura this- teriyaki that, along with delightful desserts made the evening picture perfect.
Looking forward to our next evening out… definitely sooner, rather than later!

sometimes bitter can be good!

In order to detox a bit from this past holiday weekend, there was a staple element missing… wine!
So tonight on the menu was a big hearty salad of bitter greens, italian olives, black beans and juicy grilled chicken. The greens were crisp, the beans plump, the olives slightly briny, while the chicken tender and cooked on the grill with just some olive oil spray…
Dining this way is extremely filling, not to mention by mixing things up with meats, poultry or just some crisp veggies, this can make a quick, delicious and healthy meal!
I’m a huge fan of salads to begin with and could eat them all the time! So making them in order to get back on track is a good thing in my opinion…
