a cucumber… has MANY uses!!

With all this fresh produce around my house, I decided to use the cucumbers tonight and make up a wonderfully light sandwich. These sandwiches are no stranger in our household, and some have scoffed at the ingredients [just remember, that not everything needs to be fried to taste delicious]…
All that is needed to create this delightful sandwich is a hearty, multi-grain bread [preferably a loaf that is dense], sprouts or shoots, avocado, cucumber and a cheese [or even two] of your liking…
Toast the bread, spread a light mayonnaise on the slices, fresh black pepper and start building… if you want you can definitely add sliced tomatoes and even some crispy bacon [but that is your own decision]…
The sandwich is creamy, crunchy and has plenty of wow to it… I’m not saying it’s better than a greasy burger, but when you are in the mood for something healthy and a bit different give this one a whirl, I’m certain you will make it again [heck possibly that same night]…

BLT… everything’s better with bacon!!

So tonight was one of those nights when a simple sandwich could curb my hunger… what better sandwich than a BLT!
For my BLT I used a thick, butcher-cut applewood smoked bacon, vine-ripened tomatoes, a crisp red leaf lettuce, good mayonnaise, as well as a dense and hearty multi-grain loaf cut in thick slices.
A decent smear of mayo was added on each interior side of the toasted bread. Next, I began to pile everything to make the perfect sandwich!
The crispness of the lettuce, juiciness from the tomatoes and smokey, bacon[y] goodness in each bite. Brings me back to childhood and the excitement of these tasty treats…

gettin’ my grill-on!!

So today I decided early on in the spirit of summer officially starting tomorrow [just couldn’t wait till tomorrow], I was going to make barbecued chicken with homemade potato salad…
I marinated the chicken [which I had the butcher de-bone but leave the skin on], in a bourbon barbecue sauce for a good long time… The sauce was a touch smokey with a wonderful rich sweetness. Onto the grill till cooked and then set to rest and recoup their juices… It would soon be time to plate and dig in, but this barbecue chicken dinner wouldn’t be complete without my homemade potato salad.
For the potato salad it’s super simple… diced potatoes, shredded carrots, chopped celery and onion, good mayo, salt and pepper [and perhaps something special to add a little extra kick]. I made this salad early on in the day to let the flavors all marry together.
Wow what a meal… succulent barbecued chicken that had the perfect spices and flavors paired with a creamy delightful potato salad [as well as a fantastic white wine]…

Wrap and roll!

After thumbing through my cookbooks this past weekend and a trip to Whole Foods that proved lacking on satisfying my craving for a hearty chicken salad… I decided to make an old favorite! Chicken salad with a curry mayonnaise dressing. All the ingredients, right in the pantry and a shortcut for the chicken this go-around, a cooked rotisserie chicken from the market.
I tore the meat from the bones, did a quick pass through with my knife and set it aside. For the dressing… mayo, salt, fresh ground pepper [I know I know I cringed too, but sometimes you just have to do it] a splash of champagne vinegar, curry powder, chutney, craisins, finely chopped celery and scallion. After a quick purée, I poured this silky concoction over the chicken and tossed away! This is one marriage [of flavors that is] that will NOT end in divorce…
I like to prep this dish early in the day so the chicken can soak up the flavors, or better yet the day before!
Served in a whole wheat wrap alongside a fresh, light salad and dinner was ready! Simple, easy and over-the-top delicious…
