not such rave reviews…

Last night was filled with great company. It started with a trip to a fairly new restaurant in the area! Once there we were seated and the night began… Menus arrived, drinks were poured and the catching up ensued!
The many possibilities made it even more difficult to make a decision, but that’s what had to be done. Everyone placed their orders… appetizers and then entrees.
The appetizers seemed to be on the decent side; tasty and nicely portioned… dinner then arrived and that is unfortunately were things quickly went downhill. Three of us ordered filet mignon wrapped in prosciutto and topped with a creamy gorgonzola, however two came out incorrect. The waiter appeared to quickly address the discrepancy. The plates were removed and apologies given… roughly ten minutes later out came the ‘corrected’ dishes. Upon this glance, the prosciutto was missing and the side of veggies and mashed potatoes were pathetic! Again this had to be brought to the waiters attention and rectified… at this point appetites were being lost! Finally the dishes came out, but presentation of the dishes were completely lacking. The prosciutto was not crispy and everything on the dish appeared to be an afterthought… the waiter, although polite, seemed to be losing his patience and his sense of irritation began to appear. This was not the appropriate response on his part, but he definitely got the hint!
All in all, the experience was a sore one, however the company is always what makes a meal in my opinion and that made the night special.
I am looking forward to cooking an exciting dish tomorrow night so stay tuned!

meat and potatoes…

So what better way to warm up on a chilly night than with a hearty bowl of beef stew piled high atop creamy and oh so delicious yukon gold mashed potatoes!
I started by browning the meat [tossed with flour and seasoned with salt]… once browned the meat was set aside and some new olive oil went down into the pot! Then in went six carrots and celery, along with four leeks that I chopped up. Some more salt and a bunch of stirring helped soften the veggies and also scrape off the yummy goodness that formed on the bottom of the pot! After the veggies were smelling amazing, in went some chopped garlic [go crazy] and a can of tomato paste… some additional stirring ensued until the paste almost melted away and just offered a beautiful richness in the pot!
Next came one of my favorites… two bottles of Guinness [stirred and reduced]. Once reduced, the meat went back into the pot and was covered with a quart of chicken stock, four bay leaves and a bundle of thyme!
Brought to a boil and reduced to a simmer, this lovely concoction cooked away for a little over an hour…
The last thing to do?? Plate over some velvety yukon gold mashed potatoes and enjoy like ravaged beasts!

the big day, full of big flavors!!

The last few days have been filled with preparation for the Thanksgiving holiday… numerous runs to the market, prep work of some appetizers, as well as the big important part… the turkey!
The appetizers were endless… fresh mozz and tomato, stuffed mushrooms, marinated artichokes, along with a variety of others…
The main course was equally as vast! A nineteen pound turkey that was seasoned with my special ingredients [as well as ALOT of butter], fluffy stuffing, sautéed carrots, mashed potatoes, various sweet potato dishes, brussel sprouts, cauliflower sautéed in garlic and oil, as well as quite a few more…
After a quick cleanup and resting period, it was time for dessert… where oh where was one to put these?? Homemade pumpkin pie, coconut custard, a pecan cheesecake, cakey pumpkin chocolate chip cookies, cream puffs and an apple pie…
Stuffed is not a word to describe exactly how I’m feeling now, but once a year it’s acceptable and allowed!

a homestyle classic that always delivers!!

Tonight, thanks to a dreary day, felt like a perfect night for some homey, comforting cooking in the kitchen. I decided to make a hearty meatloaf dinner full of everyday ingredients that everyone has in their pantries… salt, pepper, eggs, breadcrumbs, olive oil, water and of course good ground meats. My meatloaf is a three-type meat blend of ground sirloin, lamb and veal, which I always get from the local meat purveyor.
Everything was added to a large bowl and gently combined… once thoroughly mixed, it was time for a long bake in the oven until cooked.
As a side dish, I normally would whip up [literally] some mashed potatoes. I wasn’t feeling that, but instead craved broccoli rabe sautéed in lots and lots of garlic and oil! So that craving became a reality on the plate…
The meatloaf was moist and flavorful, while its counterpart slightly spicy, but plenty garlicky!
I am so glad that there was enough so that tomorrow there is some for a meatloaf sandwich…

throwback dinner!!

Recently there has been mention from a certain someone craving a certain dish from his childhood… that dish however comes in the form of a microwaveable tray with a piece of meat, a veggie, mashed potatoes and a sweet treat. I decided to satisfy that craving and whip up my own take on that old school meal!
On the menu… thick and juicy salisbury steaks simmered in a homemade mushroom, garlic and ginger gravy, super fluffy garlic mashed potatoes [with a special kick to elevate them even further], haricot vert sautéed in a garlic-infused oil, and last, but certainly not least to end the meal… almond cake with a crunchy, crumbly, nutty topping!
The only thing I watched… the plate getting empty… like a tv show with a happy ending!
