Sunday never tasted so good!

It’s been a while since we’ve had a proper Sunday supper… With snow on the ground and the perfect winter chill in the air, I thought something braised was the key!
Everything started by generously salting a bone-in pork butt and then browning it in some extra virgin. As soon as the pork was browned on all sides, I set it aside and in went sliced onions and celery until softened and fragrant. Once close to transparent, in went a good handful of minced garlic, bay leaves, fresh thyme, along with a big drink of Saba and homemade stock to let the pork swim in.
The lid to my cast iron pot went on and it was off to bake in the oven at 375 for two hours, which felt like days, as the scent of sweet, acidic goodness wafted throughout the entire.
To serve, slices of the pork were dazzled by the grape-like, onion syrup. Each bite was like cutting through butter and made it terribly difficult to not sop every morsel with some crusty bread! The few leftovers remaining are going to make a killer lunch sandwich tomorrow.

Summer Sunday supper!!

With Sunday supper on my mind, and finally some sunny [yet über humid] weather upon us I felt the need to marinate some sexy flank steak and then toss onto the grill! To serve up alongside, a beautiful tossed salad with a homemade balsamic dressing and some beautiful grilled asparagus.
The salad was just a mix of crisp romaine, sliced roasted red peppers, a diced shallot and homemade stuffed mozz! As for the asparagus, just a toss in some homemade infused olive oil and salt.
Once grilled and rested, the steak and sides were ready to eat up and enjoy… thrilled that there is a bit of leftovers for some lunch tomorrow!!

cinco of my own…

This cinco de mayo was just for UNO… with an under-the-weather other half, two meals were prepared… one for me and one him!
In typical fashion for cinco de mayo, what better to do than whip up something for this festive occasion. The thought of chicken fajitas topped with some homemade guacamole came to mind!
I started sautéing an onion and poblano peppers until slightly softened, but still crisp [which I then set aside]. In this same pan, I pan-fried some marinated chicken that I sliced into strips. Once cooked through, I added back in the onion and peppers, along with some black beans and gave a quick toss!
A healthy heaping of the chicken mixture went into a warmed flour tortilla, as well as some grated monterey jack cheese and guac…
To enjoy this beautiful dinner and bring everything together, a squeeze of fresh lime juice. The lime juice gave a citrusy freshness that paired perfectly with the crisp, slightly spicy poblanos and deliciously seasoned chicken…
So happy I have some leftovers for lunch tomorrow!!

light Italian fare…

To kick off the holiday weekend, we celebrated with a great bottle of wine and a full-on Italian dinner at one of our favorite restos!!
I decided on a golden, pan-fried chicken cutlet topped with peppery baby arugula, sweet chopped tomatoes and red peppers, along with milky diced fresh mozz.
The flavors all married together beautifully and made me wish I had a big enough belly to finish off the entire plate, but the good thing is the leftovers will make for an exceptional lunch…

Part one of my Asian-themed foodie day!

What a wonderful afternoon lunch I just had! Ventured out to a new place in the neighborhood to experience their sushi. Once walking through the dramatic doorway, I was transported to a modern and intimate setting. Dark luxurious woods, comfortable seating, a lengthy sushi bar [perfect for a quick bite] and best of all, an attentive waitstaff!
For lunch, I tried the shrimp tempura roll and a sweet potato roll. All I can say is WOW! Both full of flavor and crisp from the tempura, lightly dressed with a chefs made special sauce. The shrimp roll was rolled with lettuce and cucumber, while the sweet potato was perfect just on its own. I also was lucky enough to try the sesame chicken [which I was actually planning on preparing for dinner] with the brown rice that they offer, and that was a star as well!
This lunch was a fantastic element to my day and will definitely be visiting again very soon for dinner, but as always the company is what makes a meal!
