good ole’ grandma…

Tonight I had a real craving for something that reminds me of my grandmother… nothing fancy, but super delicious, fried shrimp in homemade sauce. Now this was something she would make because I love shrimp [even though she’s allergic and can’t eat]…
So as a nod to her, I decided to satisfy my craving and recreate her ‘peasanty’ classic!
After a quick breading and rest in the fridge to setup, it was into some super hot oil just to brown the shrimp. Once browned, into some homemade sauce to finish cooking off and flavor the sauce even more.
To serve up this spectacular comfort food, a sprinkle of freshly grated pecorino cheese, some toasty sliced Italian bread utilized as the spoon in this whole story to scoop up every last ounce of delightful goodness!
My grandmother taught me many things growing up, one of them… making amazing food!

this meal really ‘stacked’ up…

After a serious craving for Italian food, I decided to do a deconstructed version of eggplant parmigiana for dinner…
Freestanding layers of crispy, breaded eggplant, slivers of melted fresh mozzarella, homemade sauce and sweet fresh basil leaves made this dish memorable [not to mention super flavorful]…

quite the cookie!

After a grueling day of shopping for Christmas presents and finishing decorating around the house, it was finally time to sit down, turn on the television and relax. Before doing that, I decided to make us some classic espresso coffees served with some beautiful, homemade Italian biscotti!
The biscotti were crunchy, nutty and a bit tart. Simply made, all that it took to make were pistachios, dried cranberries [or honestly any dried fruit you like], some lemon or orange zest, flour, salt, baking powder, sugar, butter, salt and eggs.
The most difficult part of baking these tasty little lovelies, wasn’t the cooling process, but the fact that these cookies were twice baked so it felt like the waiting game was just that…

Party platter… for two!

It has been a while since a beautiful platter of creamy, fresh mozzarella, ripe tomatoes, vibrant basil and salty prosciutto has made an appearance across our vast island…
So I decided that would be just what we would be enjoying tonight! The silky, milky fresh mozz and salty prosciutto came from my favorite Italian specialty shop, while the basil and tomatoes from our local market.
I sliced the tomatoes and fresh mozz just thick enough, and dotted the platter with the basil and prosciutto… To finish off the platter, some fleur de sel and freshly ground pepper.
Two hearty loaves of Italian breads got sliced up [one seeded, one seedless… that’s how we roll in this house] and it was time to enjoy!
A gorgeous, rich finishing oil and balsamic reduction were used to just drizzle across these little beauties and enhance the flavors, yet not steal the show…

this dish was ‘saucy’ like me…

So today I pondered what would be a good dish to prepare for dinner. After looking through the freezer, the decision was easy… Shrimp Francaise!
To prepare the shrimp, I dredged them in flour, gave them a spank and then dipped them into some egg. Into a hot pan with melted butter they went to cook up. Once browned on each side, in went the juice of two lemons and white wine to thicken everything up and get saucy with those shrimps! To put the finishing touches on this meal, I topped everything off with some crushed red pepper, julienned lemon rind and fresh minced parsley…
All that was left to do was eat… and that is just what we did! Citrusy, herby, spicy, slightly buttery and a hint of crispness from the wine… it was like a night out at our favorite Italian restaurant minus the drive!

Summer and sandwiches…

What better way to enjoy a hot summery afternoon than with a meaty delicious Italian classic sandwich…
Full of Italian ham, salami, provolone, shredded lettuce, sliced red onion and doused with a flavorful oil and vinegar dressing all tucked into a fresh baked roll!
The sandwich was crunchy from the lettuce and red onion, tangy courtesy of the dressing, slightly sweet from the ham with a complimenting bite from the sharp provolone.
Normally I cannot finish an entire sandwich, but there was no way I was letting this one slip by… it had no chance!

sausage and peppers… Oh my!

Tonight I decided that I could go for a really good sandwich stuffed fully with sausage and peppers! Like the kind you got growing up as a child on the boardwalks or even those from the local carnival or fairs when they blew into town. Those greasy, yummy sausages overloaded with peppers and onions on a gorgeous long hoagie roll! So no time was wasted in prepping up everything to create just what my tummy craved…
I sliced vibrant red peppers, chopped up some onions and sautéed sautéed sautéed… then I tossed some juicy fat Italian sausages right onto the grill to get a nice smokey flavor and threw them in with the peppers and onions to marry all the flavors. This was one marriage destined for greatness!
I piled everything a beautiful long Italian roll and shoved that badass sandwich into my mouth. Juicy, sweet and zesty! If I had a big enough stomach, there would have been seconds had…

Third times a charm…

Tonight is going to be a fun-filled evening with great friends! Looking forward to delightful Italian delicacies that are full of flavor and excitement. I anticipate starting off with some wonderful appetizers and then of course dinner… this new little place never disappoints and the company is always what makes the meal so this should be stellar ! So for now we can enjoy a great drink while waiting for our table.
