one [roasting pan] wonder…

After a long day of running errands and battling the cold weather, it was home to prep up something for a scrumptious dinner! I needed something satisfying and filling, while not taking hours and hours to prepare. Simple enough was one of my fave dishes, from one of my fave home-cooks… Nigella Lawson. It was a chicken, chorizo and potato ‘bake’. This dish is literally a ‘one pot’, rather ‘one pan’ meal! Simple ingredients that everyone has in their kitchen pantry and can be put together in mere minutes.
Into a deep roasting pan went some good extra virgin which coated both sides of a healthy portion of chicken thighs, chopped up fresh chorizo, large diced red onion and cubed yukon gold potatoes! A sprinkling of dried oregano, a scatter of salt, a grating of the zest of a clementine and it was into the oven on 425 for one hour. As the ‘bake’ cooked in the russet beauty from the oil and chorizo, the scent of oregano, citrus and spices wafted throughout.
After the cooking time was up, out appeared a bronzed, crisp chicken, seductively aromatic chorizo, browned potatoes and wilted red onion. No sooner did I take this breathtaking beauty out of the oven, that we were plated up and diving in!
This is one of my go-to recipes, and chances are if you try this it will become one of yours as well!

Chewy [spicy] treats…

So with a snowy, wintry day upon us it was yet another perfect day to do some baking!
On today’s baking sheet… soft ginger cookies with pieces of crystallized ginger baked in. A simple cookie mixture that created a beautiful cracked, vintage looking edible.
This whole batch began by sifting flour, baking soda, salt, ground ginger, cinnamon, cloves and nutmeg in a large bowl. In a separate bowl, canola oil, molasses, dark brown sugar and one extra large egg were mixed together. Once combined, the flour was added into the wet ingredients. After folding in the crystallized ginger, scoops of the dough were rolled out in turbinado sugar, lightly flattened and baked until cracked and gorgeous.
Chewy, spicy and a perfect pairing with a cup of tea… the best way to endure a cold winters day!

a morning of glory [muffins]…

With the last few months pretty high on the emotions chart, it was a bit difficult to focus on much… Things are finally starting to ease back into normalcy and I thought was better to do than whip up a hearty batch of morning glory muffins for breakfast!
I had these luxurious little delights out in East Hampton and have been completely addicted since.
Chock-full-of delicious ingredients, these little domes of beauty are simple to prepare and the flavor element is incredible! For the recipe, two cups of flour, one cup of brown sugar, two teaspoons of baking soda and cinnamon, a half teaspoon of ground ginger and kosher salt are sifted and combined into a large bowl; in a separate bowl, three eggs, good vanilla, two-thirds of a cup of canola oil and one-fourth cup of orange juice are whisked together. Once the wet and dry ingredients are prepped, I cored one green apple and peeled four carrots. Both the apple and carrots were grated, and along with some coconut flakes, soaked golden raisins and wheat germ stirred into the dry mixture. As soon as everything was incorporated, I gently added in the wet mixture and mixed everything until fully combined and moistened.
The batter was scooped into a muffin tin and set to bake for twenty-five minutes at 375degrees. After cooling slightly it was time to rip open these spicy scented lovelies and enjoy with a silky cup of lady grey tea…
Couldn’t think of a better way to start off a weekday morning!

the crowning glory…

Like a kid in a candy store, I anxiously awaited for the postman to arrive with that brown boxy item… once the box arrived I tore straight into it and from it emerged my version of the bible… my newest cookbook… ‘bread’ from the master Paul Hollywood!
Thumbing through the glossy, picture laden book was painful, as I wanted to make every single recipe listed, but I was on a mission for one perfect puffy, stuffed and twisted doughy element of perfection… The ‘savoury brioche couronne’.
As soon as I knew what ingredients I was missing, it was off to the market to gather them up and then back home to start off baking… This was such an incredible treat to make, although like most breads… time consuming!
It began with the combining of flour, yeast, salt, milk, eggs and butter… After this all was incorporated, the dough was set aside for it’s first rise. Next the dough was rolled out to a rectangle and topped off with salty, thinly sliced prosciutto, torn mozz and julienned basil! Rolled tightly together into a large cylindrical shape, the dough was then sliced down the center and then twisted together and wrapped into a circle.
As soon as this was done, it was bagged up and off for its second slumber to rise again…
Once the dough was puffy and ready for its tan, it was glazed with an egg wash and some grated pecorino. Into the oven for thirty-five minutes until swollen and golden!
The scent flooded the air as the couronne baked away, but as for the taste… well there are so many words to describe, but I prefer divine…

Guilt-free goodness…

With a craving for something healthy, yet decadent and delicious, I turned to a recipe from a dear friend whose website is chock-full-of informative ideas on leading a healthy lifestyle…
So the apple cinnamon protein muffins were the perfect way to go! Full of healthy ingredients: oat flour, pumpkin purée [not the sweetened kind], good vanilla, cinnamon, nutmeg, kosher salt, egg whites, stevia [I ran out and used Splenda for baking], whey powder, coconut oil and crisp granny smith’s!
The process of combining everything is pretty simple and only requires some pulsating in a food processor… Apples get the first few pulses until mostly puréed, but still slightly chunky. Then everything else is added in and given a whirl until brought together!
Spread out into a non-stick sprayed muffin pan, shot into a 350* oven and roughly twenty-five minutes later little devilishly good treats emerged… minus any potential guilt! So I ate one, and then another… who knows I may be making another batch before the day ends.
***Please note if you’re seeking cake like muffins you will need to incorporate baking powder/soda***

Something to spice up the night [or at least dinner]…

Tonight it was necessary for a quick dish to be thrown together, so what simpler to do than bucatini tossed in amatriciana sauce.
This super spicy [if you’re like me] bucatini hug is made of the simplest of ingredients, but the end result will have you dreaming about it while sleeping!
Everything started with a rendering of some diced pancetta; once browned and crisp, the pancetta was set aside in a bowl and the chopped onions and crushed red pepper were sweated away in the rendered fat. While the onions were getting their workout, I got mine by passing two cans of San Marzano tomatoes through a food mill. This pulpy purée if you will was added into the sautéed onions and crushed red pepper, some salt tossed in and set off to simmer for a while!
The dish came together beautifully with a quick, rough stir of the pasta, a hand of grated pecorino and a drizzling of finishing oil…
The heat factor was just enough to make your tonsils feel the heat, but not too much to make you sweat. Love having this dish recipe in my arsenal!

simple saturday supper…

So with Saturday night upon us, the question always arises… ‘What’s for dinner’. After a pretty exhausting day, and little desire to get dressed up to go out, I decided dinner would be home cooked!
A rich pasta ‘bake’ from one of my fave home cooks, Nigella Lawson… after looking through her newest cookbook, the whole wheat pasta with brussels sprouts, cheese and potato really stood out. I have made a dish like this in the past with some slightly different ingredients, but decided to give it a go…
The process is as simple, as simple can be… in one pot of boiling, super salty water the pasta, brussels sprouts and potato are cooked together. A slight amount of the pasta liquid is reserved before draining.
While the pasta is cooking, I cubed up some gruyere cheese and measured out some fresh ricotta. This lovely, creamy mixture was tossed with the drained pasta, brussels sprouts and potatoes.
After everything was coated, it was into a baking dish, drizzled with some oil, sage and a heavy hand of grated pecorino. Baked for roughly thirty minutes, then a slight resting period and it was time to eat!
The flavors all complimented one another and made me question… how could this possibly serve anymore than two??

sunday night sweet tooth!!

To end the weekend on a sweet note, I thought a luxurious, slightly dense cake was in order! This was not just any cake, but rather a family favorite and old recipe passed down…
The cake has an interesting array of ingredients, including both pineapple and bananas, and is filled in/topped off with a silky cream cheese frosting coated in toasted coconut that just exudes sensuality.
Once it was ready to slice into and eat, the vision of heaven glimmered across the plates! With each bite of the cake, the desire to eat more and more became apparent… this was not going to be just a single slice of heaven, but rather the following day… a whipping on the treadmill!

a day for celebration…

Today couldn’t have been a better day… not only is it Friday and the start to a wonderful weekend, but it also happens to be ‘National Margarita Day’ [I feel like it was just recently National Margarita Day, but who cares since I sure don’t need a special day to enjoy a few!]…
So in honor of this spectacular day, what better to do than celebrate by downing a few homemade margs! That everyone, is exactly what we will all be doing tonight!
First we will start off with a traditional with fresh squeezed lime juice, another chock full of fresh raspberry that I’ll purée and then lastly one with pomegranate/blueberry.
After a quick dash to the market this morning, I picked up all the needed ingredients for our Friday night fiesta.
Good tequila is what makes a great marg, but some blue corn chips and homemade sweet/spicy pineapple salsa make you go back for more!

a meatless midweek meal…

So with a craving for breakfast all day, and the fact that today should be a ‘meatless’ meal… what better to have for dinner than fluffy, buttermilk pancakes.
To go alongside, yukon gold hashbrowns with onions and vibrant poblano peppers.
Since the pancakes were the star, I stayed true to just simple ingredients to create the best, cloud-like rounds…
To top off the pancakes, rich and luxurious maple syrup, along with a pat of butter.
The hashbrowns were golden and crisp, with a touch of smokiness and spice from the poblanos.
This was definitely a winner in my

book!
