a morning of glory [muffins]…

With the last few months pretty high on the emotions chart, it was a bit difficult to focus on much… Things are finally starting to ease back into normalcy and I thought was better to do than whip up a hearty batch of morning glory muffins for breakfast!
I had these luxurious little delights out in East Hampton and have been completely addicted since.
Chock-full-of delicious ingredients, these little domes of beauty are simple to prepare and the flavor element is incredible! For the recipe, two cups of flour, one cup of brown sugar, two teaspoons of baking soda and cinnamon, a half teaspoon of ground ginger and kosher salt are sifted and combined into a large bowl; in a separate bowl, three eggs, good vanilla, two-thirds of a cup of canola oil and one-fourth cup of orange juice are whisked together. Once the wet and dry ingredients are prepped, I cored one green apple and peeled four carrots. Both the apple and carrots were grated, and along with some coconut flakes, soaked golden raisins and wheat germ stirred into the dry mixture. As soon as everything was incorporated, I gently added in the wet mixture and mixed everything until fully combined and moistened.
The batter was scooped into a muffin tin and set to bake for twenty-five minutes at 375degrees. After cooling slightly it was time to rip open these spicy scented lovelies and enjoy with a silky cup of lady grey tea…
Couldn’t think of a better way to start off a weekday morning!

A warming Sunday supper!

So on this rainy and cold Sunday, I felt the desire to whip up something hearty and as expected… delicious!
Bangers and mash, something near and dear to my heart [as is my shepherd’s pie] seemed to be the perfect dish to make. So it was off to the market, were I picked up some girthy [would make anyone blush and take a second look] bangers! The name alone says it all…
Once home a quick prick [no pun intended] and it was time to brown these gorgeous, plump delights. As soon as they were browned, the bangers were set aside, while I sautéed some onions for a luxurious gravy to cascade over the finished dish. To the onions, a few tablespoons of flour and some chicken stock to slightly thicken the whole idea.
The bangers were added back to the onion gravy and simmered until fully cooked! While the bangers were getting to know their saucy counterpart, I was also in the process of making some of my kick-ass mashed p’s…
After a quick QC of the mash and gravy for seasoning, it was time to plate and basically inhale! Each mouthful made you want to shove another banger, dripping with that onion gravy and creamy mash, into your mouth… however we all need to practice some restraint at times! Ok maybe restraint didn’t happen during this meal…

farro[SO] yummy!

Since the weather took a turn from warm and summer-like, to a slight bit cooler it seemed fitting to make a hearty, warming meal for dinner…
After raiding my fridge and pantry, it was easy! A nutty farro dish with an Asian flavor base to it! Shredded carrots, diced onions, some minced garlic and ginger, chopped porcini mushrooms and sautéed shrimp all came together with a hint of sesame oil, a few tablespoons of soy sauce and a dash of hoisin…
The dish literally takes no time to prepare, but the incredible depth of flavor would make you think otherwise!

B-L-Totally Awesome!

So this past holiday weekend was a full-on baking extravaganza, chock full of bread loaves, buns and crumbles… The loaves and buns were whipped up using one of my favorite British cookbooks.
Since there was an abundance of homemade Sherston loaves in the house, I decided to slice up some heavenly chunks and do classic BLT’s for dinner!
After toasting up these lovely slices, a smear of mayo acted as the glue for building up these hearty sandwiches! Thick rings of juicy red tomatoes, crisp and cool leaves of romaine, along with salty, applewood smoked bacon brought this masterpiece together…
The juicy tomatoes oozed their gorgeous, sweet nectar and dripped down my lips as I savored each and every bite! Since one sandwich disappeared so suddenly, I am not embarrassed to say that an additional BLT made its way onto my plate and then into my belly…

dinner was [soup]erb!

With a wickedly bone chilling day to deal with, it seemed only appropriate to crank out a hearty pot of soup for dinner! Something to warm up the soul and fill up our bellies couldn’t be made quick enough…
I started by chopping up an onion, mincing some garlic and slicing some carrots. The veggies all were sautéed in a heavy pot with some olive oil until softened and the house smelled amazing. After sautéing the veggies, in went some sliced smoked turkey sausage until cooked through. Once the veggies and sausage were ready, in went the dried split peas, homemade chicken stock and water. A quick stir, then the lid went on and the soup simmered until completely cooked. To top off this luxurious soup… homemade croutons.
The first spoonful instantly warmed us up and made us forget the chilly, deep freeze that was rolling through our town!

it’s a bit ‘chili’ in here…

So tonight I wanted something warm and hearty… something I don’t often venture into making… chili! This was not going to be a typical beef chili, but something with a slight edge to it.
I knew I had everything to whip up this stew-like concoction, so the mission began. I started by browning off hot and sweet bulk sausage. Once browned and gorgeous, into the pot went two spanish onions that I diced up. As soon as the onions became soft and a bit caramelized, in went a few cloves of garlic that I minced, along with some spicy green chilis! These all cooked together for a few minutes until the flavors started to marry.
After everyone was getting to know each other, in went cumin, ancho chili powder, cayenne pepper and salt [these are all to taste so go crazy or be gentle]… a quick stir to mix the spices and then one large can of crushed tomatoes and one large can of San Marzano tomatoes [these were puréed before I added them]. Another quick stir and as soon as the chili began to boil, then I dropped the heat to a simmer and put the lid on the pot. I let the chili cook for thirty-five minutes [twenty-five minutes into cooking I added a can of black beans…] Once cooking was finished, off the heat went in some chopped cilantro.
To plate up [or should I say bowl] this meal… some light and crisp tortillas, crème fraiche and extra sharp cheddar.
The flavors were intense… spicy, sweet, lemony and a touch acidic! This time two bowlfuls did just not satisfy…

sometimes you feel like a nut…

After visiting one of my favorite places… out I came with this hearty beauty! Full of flavor and a touch of nuttiness. This rustic little gem paired perfectly with a crisp glass of white wine, red grapes, fig jam and a creamy, slightly pungent triple crème…

a homestyle classic that always delivers!!

Tonight, thanks to a dreary day, felt like a perfect night for some homey, comforting cooking in the kitchen. I decided to make a hearty meatloaf dinner full of everyday ingredients that everyone has in their pantries… salt, pepper, eggs, breadcrumbs, olive oil, water and of course good ground meats. My meatloaf is a three-type meat blend of ground sirloin, lamb and veal, which I always get from the local meat purveyor.
Everything was added to a large bowl and gently combined… once thoroughly mixed, it was time for a long bake in the oven until cooked.
As a side dish, I normally would whip up [literally] some mashed potatoes. I wasn’t feeling that, but instead craved broccoli rabe sautéed in lots and lots of garlic and oil! So that craving became a reality on the plate…
The meatloaf was moist and flavorful, while its counterpart slightly spicy, but plenty garlicky!
I am so glad that there was enough so that tomorrow there is some for a meatloaf sandwich…

a fall meal that’s fall-off-the-bone good!

Well today was officially one of the chilliest days this Fall season has offered thus far… So a hearty, slow cooked meal seemed highly appropriate!
Braised short ribs were the obvious choice and they truly satisfied.
These meaty delights were salted and seared till all sides were a gorgeous crusty brown… once the short ribs were browned they got a quick rest, while in the same pot went a slew of puréed veggies which were cooked till browned. After the veggies browned, tomato paste and a bottle of red wine were added. Once everything was incorporated and slightly reduced, the short ribs were nestled back into the pot, a bundle of fresh thyme and bay leaves were added, as well as some water. Next it was time to put a lid on it and bathe in the oven for three hours. Those three hours felt like an eternity, but the outcome was totally worth the wait!
Fall-off the bone meatiness coupled by a rich saucy goodness and this meal was an absolute winner in my book!

rollin’ with the flavor… AGAIN!

Tonight’s dinner was a fun favorite that usually is ordered as part of take-out Chinese, but this evenings nosh was served up from scratch.
The all mighty egg-roll, the perfect mix of hearty veggies and chicken encased in a crunchy shell.
The ingredients were simple… red onion, red pepper, celery, garlic and ginger, shredded carrots and savoy cabbage, chunks of seasoned chicken and creamy sliced avocado.
After a quick sauté of the red onion, celery and red pepper, I tossed in the ginger and garlic until incorporated, then cooked the chicken alongside everything! Once cooked, I mixed in soy sauce and sesame oil to taste…
Once this fragrant combo was done, they were sealed up snuggly in egg-roll wrappers… One little bit of advice, don’t over stuff the egg-roll, otherwise you will have cracks and it won’t hold together when frying.
After a quick fry just to get that beautiful golden outside and it was time to eat!
