tonight we went for seconds…

For a lighter weeknight meal, I decided on some grilled chicken breast on bed of crunchy romaine with dried cranberries and shredded cheddar.
The chicken was moist and full of flavor, while the romaine cold and crisp! The dried cranberries were both sweet and tart, the cheddar offered a slight bite.
This is definitely a meal where seconds are allowed, and perhaps even encouraged!

sometimes bitter can be good!

In order to detox a bit from this past holiday weekend, there was a staple element missing… wine!
So tonight on the menu was a big hearty salad of bitter greens, italian olives, black beans and juicy grilled chicken. The greens were crisp, the beans plump, the olives slightly briny, while the chicken tender and cooked on the grill with just some olive oil spray…
Dining this way is extremely filling, not to mention by mixing things up with meats, poultry or just some crisp veggies, this can make a quick, delicious and healthy meal!
I’m a huge fan of salads to begin with and could eat them all the time! So making them in order to get back on track is a good thing in my opinion…

light and delicious!!

To take a healthier approach to dinner, after a weekend of devouring everything in sight, I decided on grilled chicken marinated in garlic and olive oil. I sliced and rested the chicken on a bed of bitter radicchio, tossed with sliced olives, garbanzo beans, shaved provolone and homemade croutons. Simple, yet healthy and very filling!

On a bed… of greens…

A nice crisp salad with grilled chicken breast was on my mind all day, but I never had the opportunity to put one together or even grab-and-go… So I marinated some chicken breast and tossed it onto the grill, while putting together a quick salad full of garbanzo beans, shards of sharp provolone [picked up a decent size chunk at the Italian specialty store] and sweet cherry tomatoes…
All the layers of flavor… salty, pungent and a sharp bite from the provolone, sweet from the tomatoes, creamy from the snap of biting into the garbanzos and earthy from the mixture of spicy, bittery greens. The grilled chicken cut through the salad with ease and offered a perfect contrasting element to this light and delicious meal!

it’s getting steamy in here…

Tonight I decided to prepare a slightly healthier meal. Grilled chicken marinated in a ginger sauce served with steamed cauliflower, carrots and peas with mushrooms.
The dish is a very quick cook, but definitely hits the flavor full-on! The chicken which I have pounded thinly at the butcher takes roughly eight minutes to grill [love having an indoor grill when it’s too chilly outside]. As for the veg, it all depends on the type you are serving. Some take a few, while others can take a bit longer! You want them to remain crisp, and definitely not cooked to death…
All in all for a meal I normally do not prepare, this one definitely came out delicious and healthy! It’s better than a packaged product that appears healthy, but is full of additives. This will definitely makes its way on our plates again…
