refreshing dinner on a hot day…

With this oppressive heatwave still upon us, there was no way I was turning on the range or even the grill for that matter! Instead I thought it best to make some fresh pesto and have a refreshing sandwich night full of yummy things.
After making the pesto, it was time to assemble these pockets of delight… A healthy spread of the pesto adorned the lightly toasted ciabatta, followed by some spicy arugula, slices of fresh mozz and of course some phenomenal prosciutto di parma!
With the lid closing down snuggly and making this vessel ready for the feeding, there was not much more to do than succumb to it’s will…
A slight bite from the arugula, saltiness from the prosciutto, creamy from the fresh mozz and just an overall freshness from the pesto made this sandwich the perfect compliment to an über hot July evening!

Summer Sunday supper!!

With Sunday supper on my mind, and finally some sunny [yet über humid] weather upon us I felt the need to marinate some sexy flank steak and then toss onto the grill! To serve up alongside, a beautiful tossed salad with a homemade balsamic dressing and some beautiful grilled asparagus.
The salad was just a mix of crisp romaine, sliced roasted red peppers, a diced shallot and homemade stuffed mozz! As for the asparagus, just a toss in some homemade infused olive oil and salt.
Once grilled and rested, the steak and sides were ready to eat up and enjoy… thrilled that there is a bit of leftovers for some lunch tomorrow!!

spring warmup!

So after realizing we are in for a pretty warm couple of days [especially tomorrow], I decided that grilling was the perfect way to truly welcome in Spring!
A trip to the local butcher this morning, yielded some beautiful, thickly cut steaks. I can almost smell the fragrant, smokey goodness that the grill offers once the meat hits those searing hot grates! My mouth is already watering in anticipation… dinner can’t come soon enough!!

south of the border…

So tonight was a nod to a summer favorite… guacamole! It’s been what feels like a while since I’ve made a fresh, creamy batch. Since we couldn’t [well I guess we could have] just eat a bowl of freshly made guacamole, I thought why not make a whole meal around it!
So marinated skirt steak fajitas and arroz con crema seemed to be the perfect idea… To top the fajitas, sautéed onions and peppers and fresh squeezed lime juice.
For the arroz con crema… I prepared some rice. Once the rice was done, in went two cups of heavy cream, chopped roasted poblano peppers [just tossed on the grill until charred, covered with plastic wrap and then peeled], pozole, cilantro, monterey jack and cojita cheeses. Everything was stirred until combined, melted and creamy!
To build up these skirt steak fajitas… a spoonful of the arroz con crema was spread on a tortilla, along with the sautéed onions and peppers, the grilled skirt steak, a dollop of the guacamole and a squeeze of the lime juice.
Each bite was full of so many different flavors… creamy, citrusy, sweet, savory! Guacamole thank you for an exciting meal…

what came first… the burger or the egg?

As summer nears to an end, I cranked up the grill for some juicy burgers. These burgers however took on a different approach… some top a burger with lettuce, onions, pickles and tomatoes, while others just believe in a ‘vanilla’ burger… as for myself, I can go for all of those toppings, but tonight I decided a fried egg would also be a perfect element to cut through the meaty goodness!
A simple salt and pepper seasoning on the egg, a quick pan fry and it was time to rest this yolky beauty on this gorgeous piece of meat!
The building blocks of this perfect burger were simple and gracious… a single slice of cheese, slices of applewood smoked bacon, grilled onion and then… the star, the breathy fried egg.
Meaty, bacon-y goodness was almost sweetened by the creamy yolk that rushed down from the top of the burger like a volcano oozing lava…
What a perfect precursor to a Labor Day weekend feast!

I like to let my meat hang[er] around…

Tonight was a perfect night for grilling some meat, but not just any meat… gorgeous hanger steaks!
I picked up some real beauties at the butcher, got them home and slapped on a great marinade. To make the marinade I needed some mustard, garlic, crushed red pepper, fresh rosemary and lemon juice! Once combined, I rubbed my meat with the marinade and tossed it into the fridge to chill out and get all cozy.
Once ready to grill, the steaks were cooked for five minutes on each side and then rested for another ten. The steaks were juicy and full of intoxicating flavors!
As a side to my steaks, I thought a ‘spin’ on spinach could be interesting… So I decided on sautéing grapes and mixing them with the spinach. I was a bit apprehensive about the combination, but have to admit… there was practically nothing left. It was delicious!! The sweetness from the grapes played nicely against the earthy spinach. Next time I make this, I will be buying extra spinach!!
I feel like I ate enough for an entire family… well no regrets here!

finger licking… well you know the rest!

So all good things must come to an [brief] end… vacation has been wonderful and full of adventures! We are now returning to reality as the evening hours set in, but our August vacation is only a few short weeks away.
Tonight I decided on a quick grilled dinner… chicken wings in an Asian marinade, served with grilled corn and a salad with greens plucked literally from the in-laws garden [can’t get more locally grown then that]!
This meal could have fed an army, but tonight just two devoured this feast. It also offered up my three favorite S’s… sticky, sweet and spicy! For the corn, it was simple… onto the grill and once cooked tossed into a bath of grated pecorino romano and some spicy stuff to melt together! The salad was equally simplistic, greens tossed with fresh cut mango.
Just because a vacation is ending, doesn’t mean a dining send off suffers.

such a tease!!!

Granted today was supposed to be a washout in terms of weather, but once that sun starts peeking out you can’t help, but go into full-on summer mode! So now for the last few hours, the sun has played the hide and seek game and is starting to ride on our emotions…
I figured if it was warm and sunny, I’d throw some thick, juicy steaks on the grill, along with some fantastic asparagus and call it dinner. Who knows though… I don’t do jacket or umbrella grilling sessions so we will see later. For now though, I will continue to slurp down some drinks, listen to the wind blow and the birds chirp… all while thinking about nothing! That’s my kinda weekend…

dinner in the [porter] house!

So after a grueling day of laying around by the pool, it was that time again… dinner!
Tonight was a special night of grilling and the star of the show was a gorgeous, thick porterhouse steak. The porterhouse is cut from the rear end of the short loin, and are made up of a strip steak and filet mignon. To not strip away from its meaty goodness, this super cut of meat was dressed only with kosher salt and some fresh pepper [not usually my go-to] and grilled to perfection.
As a side, the market had some beautiful fresh corn. So seasoned with my very own homemade garlic oil, freshly grated pecorino romano and some spicy stuff [shhhh it’s a secret] and these little gems were tossed onto the grill in some aluminum foil till tender!
After grilling the steak, it took a ten minute nap and then onto the plate with its date for the evening. Juicy and succulent with the perfect grill marks, while the corn was sweet, briny and a touch spicy!
Wonder what tomorrow will bring… probably no grilling since rain is in the forecast… sigh… Well I’m sure it will be tasty!

finger food!

After a craving for an appetizer that we had a few weeks ago, I decided that lamb chops would be a perfect romantic meal for two. Seasoned only with salt, these little guys were gently seared on the grill for about three minutes on each side. The outcome… beautiful grill marks and a perfect medium rare! As a dipping sauce, I prepped a whole grain mustard and rosemary blend with a little garlic, olive oil and salt.
Topped on a bed of spicy baby arugula with a drizzle of a deep finishing oil and it was time to dig in!
Meaty, fatty and just plain intoxicating with the mustard as a perfect compliment to cut through it all, yet pull everything together. Who are they kidding…eight is definitely NOT enough…
