nothing wasted…

So after playing around with what would be for dinner, I realized that I had some lonely grape tomatoes sitting out just waiting to release their juicy goodness! What better to do with them, but make a quick, but flavorful sauce to toss with some pasta…
I simply sautéed the tomatoes in some olive oil until they softened, wrinkled and began to let out their sweet juices. Once those juices started flowing, in went some minced garlic and a touch of super rich balsamic vinegar! As soon as the sauce began to reduce and dash of salt went in, a quick stir and then of course… a taste!
Sweet, salty, slightly acidic and full of that perfect punch. Tossed with some beautiful, ribboned pasta and it was time to experience sensuality…

crisp and delicious!

After another Saturday full of decorating for the upcoming Halloween holiday, the decision of what would end up on our plates, bit more importantly… in our bellies!
One can only deal with Chinese takeout or pizza that much [I mean don’t get me wrong, I am a lover of good Chinese and a fantastic bottle of wine] but tonight I wanted something a bit lighter, full of intense flavor and still satisfying…
A chef salad was the perfect way to go! Crisp and cold lettuce tossed gently with red onions, green olives, hot peppers, plump grape tomatoes and rolled provolone, ham and turkey in an olive oil and red wine vinegar dressing…
Mmmm what a perfect decision that was and some leftover to have alongside tomorrow nights dinner!! I just love double duty dishes…

Simple is never boring…

Tonight was pasta night… felt like I hadn’t made a pasta dish in quite sometime [guess I should have looked at my posts hahaha]… So whole wheat linguine tossed with sautéed grape tomatoes, garlic and basil was ‘what’s for dinner’!
I simmered the tomatoes in a touch of olive oil until they burst and released their juicy goodness. To the tomatoes went some minced [but still chunky] garlic, as well as some white wine! Simmer… simmer… simmer…
Once the pasta was al dente, into the sauce, swirled to combine with grated pecorino romano and some basil that was chiffonade… Then guess what? Dinner was served!
