refreshing dinner on a hot day…

With this oppressive heatwave still upon us, there was no way I was turning on the range or even the grill for that matter! Instead I thought it best to make some fresh pesto and have a refreshing sandwich night full of yummy things.
After making the pesto, it was time to assemble these pockets of delight… A healthy spread of the pesto adorned the lightly toasted ciabatta, followed by some spicy arugula, slices of fresh mozz and of course some phenomenal prosciutto di parma!
With the lid closing down snuggly and making this vessel ready for the feeding, there was not much more to do than succumb to it’s will…
A slight bite from the arugula, saltiness from the prosciutto, creamy from the fresh mozz and just an overall freshness from the pesto made this sandwich the perfect compliment to an über hot July evening!

tasty balls’ on a bun…

So early this morning I woke to the craving of a meatball ‘parm’ sandwich… I, not shunning a good old fashioned pizzeria, decided that I would make a beautiful pot of sauce [enough to have leftovers for other occasions] and homemade meatballs!
A trip to the market yielded everything I needed to pull this home-run together…
While the sauce simmered away, I got cranking on my balls’… and I must admit I offer up some of the best tastin’ balls around!
To bring this whole story together and serve it up, I toasted some buttery brioche buns, sliced some fresh mozz [melted this of course] and capped these bad boys and began chomping!
Needless to say, one sandwich per person was no way enough…

the big day, full of big flavors!!

The last few days have been filled with preparation for the Thanksgiving holiday… numerous runs to the market, prep work of some appetizers, as well as the big important part… the turkey!
The appetizers were endless… fresh mozz and tomato, stuffed mushrooms, marinated artichokes, along with a variety of others…
The main course was equally as vast! A nineteen pound turkey that was seasoned with my special ingredients [as well as ALOT of butter], fluffy stuffing, sautéed carrots, mashed potatoes, various sweet potato dishes, brussel sprouts, cauliflower sautéed in garlic and oil, as well as quite a few more…
After a quick cleanup and resting period, it was time for dessert… where oh where was one to put these?? Homemade pumpkin pie, coconut custard, a pecan cheesecake, cakey pumpkin chocolate chip cookies, cream puffs and an apple pie…
Stuffed is not a word to describe exactly how I’m feeling now, but once a year it’s acceptable and allowed!

platter full of flavor…

Tonight was a small plates type of night… fresh mozz, leftover broccoli rabe, medjool dates and a briny cannellini bean purée smeared thickly on a biased slice of bread!
The cannellini purée was thick and full of texture. One can of cannellini beans [rinsed] was pulsed with Greek olives, some fresh oregano and fruity olive oil… the outcome was a creamy, slightly salty spread that paired amazingly well with a beautiful bottle of Gavi! The wine cleaned off our palates and helped prepare us for bites of everything else that was on display for the pickin’s. And pickin’ was just what we did!

sandwiches with a chaser!

Usually for me it’s burgers and beers [or some other deliciously devilish libation], but tonight was hearty sandwiches with some great craft beers!
Ciabatta rolls that I lightly toasted were topped with a schmeer of dijon mustard, fresh mozz, roasted red peppers, thinly sliced chicken breast and prosciutto. Case, or should I say lid closed…
Crunchy from the bread, the perfect zip from the dijon to balance out the sweetness of the peppers, salty from the prosciutto and chicken breast, while creamy from the fresh mozz.
As a side… a crunchy broccoli slaw! Plump raisins, diced celery, red onion, cabbage and crunchy broccoli tossed in a sweetened dressing.
Now to finish my beer…
