Freshly baked beauty…

With a stormy day forecasted today and a very sick other half, I felt the need to stay put…
After playing chauffeur to the doctor, once home I decided to make a loaf of bread, from my favorite ‘bread man’ Paul Hollywood, that I haven’t made in quite some time. This loaf is absolutely gorgeous when baked, but just so simple to prepare…
A combination of bread flour, salt, yeast, olive oil and water was kneaded in my mixer until pulled together and completely incorporated. Once smoothed and slightly elastic, the dough was set to rise in a lightly oiled bowl. The first rise took roughly three hours… After that rise, the dough was ‘knocked back’ and formed into a cylindrical shape. The dough was placed on a sheet tray and covered for a second rise. For this rise, I allowed the dough to nap for another three hours to develop an even stronger flavor.
Upon completion of its second rise, a spritz of water, dusting of flour and four deep slashes prepared this beautiful ‘bloomer’ for its bake. The scent of fresh bread baking wafted throughout the house and made the urge for a warm slice inevitable! As soon as baking finished off, a crusty golden and luxurious loaf emerged, and so did a slice to make certain it was as delightful as I expected…
Tonight this enticing bloomer will get a nice toast and slather of Nutella for some naughty goodness!

Stacked with flavor…

A long day, yielded the will to make a delicious eggplant parm supper! After making a trip to a fresh vegetable market and picking up some plump purple lovelies, it was time to head home and start the prep work for what would be a delightful supper…
Everything started by making a big pot of sauce; it was then off to slicing the eggplants and then dusting each in flour, dipping in egg and a quick coating in breadcrumbs and it was then time to start frying.
After all was crisp, it was time to build up and create the perfect marriage… a layer of sauce, then eggplant, some grated pecorino and mozz, basil and then repeated…
A quick bake in the oven and it was time to sit down, sip a glass of wine, slice into and then enjoy!

naughty and nice…

I can hear the sleigh bells in the distance and see the occasional mistletoe overhead… So I decided it’s the perfect time to make little treat bags to hand out to all our favorite friends.
These treat bags include homemade spicy, chocolatey brownies decorated two ways… one drizzled with white chocolate + sprinkles and the other… simply coated in a white dusting of powdered sugar snow.
In addition to the brownies, linzer tarts filled with raspberry jam in the shape of snow flakes. To finish off these little dreamy cookies, some powdered sugar to dress it for the occasion.
Once everything was bagged up, it was time to write out the name tags, seal off the bags and deliver! Now it’s time to fill the sleigh [ok ok SUV] and make deliveries in the AM…

no nuts here…

So with a bunch of quickly ripened bananas, I thought what better to do than whip up a banana bread… not being an enormous fan of nuts however this ‘bread’ would be ‘fixed’ before even being born…
Four ripe bananas behaved badly and got a good mashing; they were then mixed in with some french sour cream and a healthy dose of vanilla. While they were starting to get along, I whisked [by hand since the recipe calls for it… bleh] two eggs [I use extra large] and sugar… this was whisked until it became fluffy and a pale yellowy color… After adding the banana mixture into the eggs, I gently added in the dry ingredients of flour, baking soda, salt and some spicy cinnamon…
The voluminous batter was then poured lovingly into a slightly greased loaf pan, gently tapped to remove any air bubbles and shot right into the pre-heated 350 degree range for about an hour. The scents of this intoxicating concoction drifted throughout the house and was attempting to put me under its spell… sweet bananas, spicy cinnamon… oh how difficult it was to contain myself!
At last, once golden and cooked through, the bread was placed in the corner [like an unruly child] to cool off. After cooling down, but still slightly warm, what better way to enjoy a slice of this sexy treat [yes I’m sorry there is no way this is just a ‘bread’] than with a light dusting of powdered sugar and a soothing cup of tea…
Hmmmm perhaps I have to seek out close-to-ripe, instead of unripened bananas from now on at the market…
