love in every bite…

With Valentine’s Day being on a Saturday this year, it was perfect to do something a bit different from years past… This meant making the entire experience a dual effort!
The day started by preparing our chocolatey dessert. Chocolate bowls were made, a chocolate sponge cake baked off, black cherries steeped in a sugary sauce and a creamy whipped topping all ready to be consumed later in the evening by the fireplace!
Our dinner was simple yet delicious; filet of beef wellingtons! It began by seasoning and searing the filets. Then red onions were sautéed in some luxurious European butter and cognac. This was then puréed into a slightly chunky ‘paste’. Each filet was then given a spread of dijon mustard, a nice dollop of the red onion paste, placed onto puff pastry and then covered over with a top layer of pastry. A brush of egg wash, tiny slit in the top and it was off to the oven for twenty-five minutes… When the wellingtons finally emerged, they were golden, puffy and full of lush flavors!
The day, as well as cooking/baking went off without a hitch… a day of romance, wonderful eats, champagne, snow and a fireplace! What more could we have wished for?

keep calm and c[u]rry on…

With a serious want for a wonderful Indian dish, but a lack of desire to go out for dinner on a Monday night… I decided to browse through some cookbooks and with what I had in the house, whip up a quick pork curry dish served with a coconut rice.
Green curry paste, sliced scallions and olive oil were the building blocks to what would soon be a delicious meal. After a quick sauté of the above, thinly sliced pork was tossed in and stirred around. Once the pork was no longer pink, in went some coconut milk, some shredded coconut, and water.
As soon as the whole lot was boiling, it all went down a notch, soybeans and sugar snap peas were added and it was time for a slow simmer to let everyone get to know each other.
After roughly twenty minutes, it was time to plate and surrender to this luxurious and flavor-laden dinner!

a morning of glory [muffins]…

With the last few months pretty high on the emotions chart, it was a bit difficult to focus on much… Things are finally starting to ease back into normalcy and I thought was better to do than whip up a hearty batch of morning glory muffins for breakfast!
I had these luxurious little delights out in East Hampton and have been completely addicted since.
Chock-full-of delicious ingredients, these little domes of beauty are simple to prepare and the flavor element is incredible! For the recipe, two cups of flour, one cup of brown sugar, two teaspoons of baking soda and cinnamon, a half teaspoon of ground ginger and kosher salt are sifted and combined into a large bowl; in a separate bowl, three eggs, good vanilla, two-thirds of a cup of canola oil and one-fourth cup of orange juice are whisked together. Once the wet and dry ingredients are prepped, I cored one green apple and peeled four carrots. Both the apple and carrots were grated, and along with some coconut flakes, soaked golden raisins and wheat germ stirred into the dry mixture. As soon as everything was incorporated, I gently added in the wet mixture and mixed everything until fully combined and moistened.
The batter was scooped into a muffin tin and set to bake for twenty-five minutes at 375degrees. After cooling slightly it was time to rip open these spicy scented lovelies and enjoy with a silky cup of lady grey tea…
Couldn’t think of a better way to start off a weekday morning!

light and filling…

As summer starts to dig its heels into long hot days, I thought a light dinner was in order. A simple, delicious mix of fresh multi-grain bread that I toasted was decorated with slivers of creamy avocado, sharp cheddar, sliced chicken breast, ripe red tomatoes and a touch of mayo. It may sound simplistic, but every last bite was filled with flavors that screamed summer is hear to stay… And you know what, I’m ok with that.

dinner on the whim…

So tonight I decided to make something that was both delicious and good for us!
In a pan, I started by browning up some organic chicken sausage that I whipped from the casing… once slightly browned they were put to the side [until they were needed for later] and then with oils from the sausage, a quick speed date of minced garlic and chopped sun dried tomatoes occurred! It quickly turned out that these frisky guys were looking for an extra addition to their evening… so in went some buttery, plump cannellini beans! As soon as everyone got to know each other, a dash of crisp white wine helped loosen everyone up and let their hair down… an addition of a little chicken stock came to the party and everyone simmered away…
While the trio was melding together, some lonely whole wheat penne took a bath in some super salty boiling water, and then got a wink from the threesome to join them for some tossing around! After a quick stir, some parsley joined in and offered up its fresh self and dinner was served…
Creamy, buttery, vibrant and luxuriously flavorful… this was the perfect meal for any night of the week!

Guilt-free goodness…

With a craving for something healthy, yet decadent and delicious, I turned to a recipe from a dear friend whose website is chock-full-of informative ideas on leading a healthy lifestyle…
So the apple cinnamon protein muffins were the perfect way to go! Full of healthy ingredients: oat flour, pumpkin purée [not the sweetened kind], good vanilla, cinnamon, nutmeg, kosher salt, egg whites, stevia [I ran out and used Splenda for baking], whey powder, coconut oil and crisp granny smith’s!
The process of combining everything is pretty simple and only requires some pulsating in a food processor… Apples get the first few pulses until mostly puréed, but still slightly chunky. Then everything else is added in and given a whirl until brought together!
Spread out into a non-stick sprayed muffin pan, shot into a 350* oven and roughly twenty-five minutes later little devilishly good treats emerged… minus any potential guilt! So I ate one, and then another… who knows I may be making another batch before the day ends.
***Please note if you’re seeking cake like muffins you will need to incorporate baking powder/soda***

smells like a sausage and pepper stand here!

Following a trip to the market for some of life’s essentials, I ripped into the produce aisle, as well as the meat department…
While at the meat counter, I picked up some well-endowed chicken sausages… thinking to myself chicken sausage with peppers and onions would be a great Monday night meal! From the meat department, I made a dash to produce and looked for the perfect peppers to pair this meal up with, and decided on some beautiful cubanelle peppers.
As soon as I made my way back home, it was prep time; slicing up an onion and the peppers, and mincing up some garlic. The prep-work was now complete and it was time to toss the chicken sausages into the sauté pan to get browned, crusty and even more delicious! Once browned, the chicken sausages were set aside, while the veg were added into the pan and cooked in all the lovely crispy bits leftover from the chicken sausages until fragrant and softened! For even more flavor bumps, a healthy dash of white wine and some salt got to play a part in this whole production…
As soon as the wine was reduced, the chicken sausages were added back into the mix with all the flavors and before we knew it, it was time to eat!
Couldn’t decide whether to pile everything high in between some freshly baked bread or just dig in from the plate, but the bread obviously won our hearts!

dinner wasn’t the only thing stuffed!

So tonight, I decided to cook up a pork loin stuffed with prosciutto, provolone and arugula…
After a quick fill and roll, a bondage-like trussing of twine finished off the prep-work for this lovely porky goodness!
A drizzle of good quality olive oil for some tanning encouragement, as well as a substantial splash of white wine and it was into the oven for a good bake…
The scents of the pork, as well as the stuffing wafted through the house and made the process of waiting even that more difficult! The end result though… well that was nothing short of delicious.

what are you bananas!!

With a few bananas remaining from the cake I made this past weekend, I decided rather than tossing then out they’d do better mashed up into a wonderful banana bread! This wasn’t just any banana bread, but rather a boozy banana bread…
I soaked sweet little golden raisins in some delicious bourbon. Once plumped up and juicy, they went into my batter that was full of the mashed bananas, chopped pecans, vanilla, two eggs, one cup of flour, two teaspoons of baking powder, a half teaspoon of baking soda and salt, one stick of melted butter and sugar.
Once everything was combined, it was into a loaf pan and then off for a nap for fifty minutes on 325. After a quick test for complete doneness, I had to taste! There was very little willpower, but tasting this freshly baked beauty was a necessity. Served up with some vanilla-infused mascarpone made this luxurious delight even more spectacular!
The boozy raisins offered a wonderful addition to the sweetness of the bananas. This definitely will be on my breakfast menu tomorrow!

good ole’ grandma…

Tonight I had a real craving for something that reminds me of my grandmother… nothing fancy, but super delicious, fried shrimp in homemade sauce. Now this was something she would make because I love shrimp [even though she’s allergic and can’t eat]…
So as a nod to her, I decided to satisfy my craving and recreate her ‘peasanty’ classic!
After a quick breading and rest in the fridge to setup, it was into some super hot oil just to brown the shrimp. Once browned, into some homemade sauce to finish cooking off and flavor the sauce even more.
To serve up this spectacular comfort food, a sprinkle of freshly grated pecorino cheese, some toasty sliced Italian bread utilized as the spoon in this whole story to scoop up every last ounce of delightful goodness!
My grandmother taught me many things growing up, one of them… making amazing food!
