Guilt-free goodness…

With a craving for something healthy, yet decadent and delicious, I turned to a recipe from a dear friend whose website is chock-full-of informative ideas on leading a healthy lifestyle…
So the apple cinnamon protein muffins were the perfect way to go! Full of healthy ingredients: oat flour, pumpkin purée [not the sweetened kind], good vanilla, cinnamon, nutmeg, kosher salt, egg whites, stevia [I ran out and used Splenda for baking], whey powder, coconut oil and crisp granny smith’s!
The process of combining everything is pretty simple and only requires some pulsating in a food processor… Apples get the first few pulses until mostly puréed, but still slightly chunky. Then everything else is added in and given a whirl until brought together!
Spread out into a non-stick sprayed muffin pan, shot into a 350* oven and roughly twenty-five minutes later little devilishly good treats emerged… minus any potential guilt! So I ate one, and then another… who knows I may be making another batch before the day ends.
***Please note if you’re seeking cake like muffins you will need to incorporate baking powder/soda***

we’re all entitled to some decadence…

To start the week off right, it was best to do it on a sweet note!
A whiskey chocolate tart topped off with luxurious, homemade whiskey whipped cream…
The tart was made using a cookbook I received as a Christmas present. I adapted it from one large tart into mini-personal sized ones.
The crust was made using shortbread cookies, sugar, salt and some melted butter. The cookies, sugar and salt are pulsed in a food processor, and then the melted butter stirred in until everything was incorporated. Pressed into the mini tart pans, the crust was cooked till just before browned…
While the crust cooled down, some milk and heavy cream were heated. Once hot, but not boiling, off the heat chopped milk and dark chocolates were whisked into the milky mixture until smooth.
In a separate bowl went some flour, an extra-large egg [plus an additional yolk] and some whiskey! Everything was beat together and then added into the chocolate mixture and whisked until combined.
The silky, chocolatey mixture was eased into the cooled shortbread crusts and popped into the oven and baked until slightly set, but wiggly in the center.
To finish this story, a hefty dollop of the homemade whipped cream and it was time to begin eating! Rich and decadent, full of chocolatey goodness… this was truly a spectacular dessert!

nothing wrong with being [or in this case eating] a tart!

Sometimes a sweet treat is in order… what better way to satisfy than with a decadent french chocolate tart dressed with shelled pistachios!
The buttery pastry shell was flakey and light, the dark chocolate slightly sweet and creamy, while the pistachios offset everything with a nice saltiness…
This was truly one of the best desserts I have had in quite sometime… hmmmm perhaps I should start having desserts more often…

the only kind of disco I can get into…

Ever have a craving for that deliciously decadent and not so good for your waistline type of food? Well that is EXACTLY how I am feeling right about now! The craving for disco fries [ok ok won’t lie, I always get a double order] hit me hard just a short while ago… crunchy, greasy fries topped with extra mozzarella cheese that I have broiled to get bubbly and slightly burnt.

When I order my disco fries, the brown gravy is served on the side and not over everything in order to keep everything crisp and not soggy! Soggy fries would NOT be a good thing in this dish, plus I get to determine how much of a dunk each fry is offered… this is also not the time to think about calories, but rather to flag down a waitress and ask for extra napkins! A fork and knife is not invited to this party, but an eager belly is…

There may be a trip to the local diner to pick up these bad-boys before the end of the night.
