Pie for a birthday dinner!

For a special day, a special dinner is required… so for this birthday dinner, a luxurious lobster pot pie was necessary!
Gorgeous chunks of succulent lobster meat were added to a creamy concoction of chicken stock, cognac, onion, fennel, corn, peas and parsley.
Nestled into a rustic, homemade and flaky crust, this beautiful delight was baked off for an hour until the crust was browned and the filling bubbly!
Once ready, a beautifully large helping of this gorgeous pie was served up with steam and all…

it’s still a bit brisk[it] outside…

So for a weekly Sunday supper, the dish started with a beautiful beef brisket that I seasoned with salt and dusted lightly with flour. This hunk of meat went into my cast iron pot to get a beautiful crunchy crust!
Once the brisket was browned, I pulled it out and placed it to the side while two Spanish onions got their own workout in the same pot and sweated it out… as soon as the onions were ready to ‘hit the showers’, the brisket went back into the pot and joined them, along with a bottle of root beer and some homemade BBQ sauce.
With the brisket partially submerged, on went the lid and it was time for a long relaxation period until the meat was tender and fall-off-the-bone[less]!
The brisket was shredded up, tossed back into the pot and mixed with the onions and sauce…
To go along with our shredded brisket ‘burritos’, a side of arroz con crema! Such a simple rice dish to prepare, but the flavor is out of this world… you combine four-five cups of prepared rice, diced poblano peppers [I roast mine on the grill], panfried corn [grilled during the summer months] and one cup of heavy cream. This all is stirred until it starts to ‘thicken’, then in goes shredded monterey jack and cojita cheeses. Lastly chopped cilantro is quickly incorporated and it’s on to eating! [I tend to not add salt… I know I know, but the cheese I feel offers enough]…
Piled high into the center of a light tortilla, dolloped with a hefty helping of homemade coleslaw and then a final tight roll! It was time to bite into this fragrant and tangy ‘burrito’. The flavors burst in our mouths and the coleslaw balanced out the slight heaviness of the brisket; this was just a wonderful Sunday evening dining experience!

a feast for Sunday dinner…

The craving for something filling and ‘feast-like’ crossed my mind while meandering through the market… with winter in full effect this past week, I thought something reminiscent of a family gathering style would do wonders for a Sunday supper!
After picking up a fresh turkey breast, some carrots, fennel, celery and herbs… all that was left to do was start to prep up this soon to be masterpiece.
Slathered in a homemade buttery ‘sunscreen’ coating and rested on a bed of sliced carrots, onions, fennel and celery [all puréed together after cooking] it was going to be just a few hours of cooking until this meal would be ready for eatin’…
While cooking this ‘bird’, I thought some interesting cornbread muffins would be a great compliment instead of biscuits! These weren’t just your typical boring cornbread muffins, but one with a kick. One large jalapeño, some diced red onion, garlic, corn, red pepper and of course cornmeal all were stars in what would become a great treat!
Lastly, this meal would not be complete without some mashed, garlicky potatoes! Yukon gold potatoes were cooked to perfection and then mashed together with some butter, milk and of course salt and pepper.
Each bite brought me back to having the family here for the holidays and enjoying everyone’s company!

crisp and cool al fresco dining…

After a night full of delectable desserts, what better way to end the weekend than with an absolutely stellar weather day, a glass of wine [ok ok more than a glass] and grilling some beautiful pieces of meat!
Homemade corn relish, a vibrant green salad chock full of healthy add-ins, along with some thick, meaty goodness…
The relish was sweet and spicy, the salad… earthy and crisp, while the meat… well how better to describe than juicy and succulent with an intense meaty flavor that literally oozed with each perfect mouthwatering bite!
I’m looking forward to many cool, fall evenings of grilling and enjoying the outside weather, and being able to share them with all of you!

dinner in the [porter] house!

So after a grueling day of laying around by the pool, it was that time again… dinner!
Tonight was a special night of grilling and the star of the show was a gorgeous, thick porterhouse steak. The porterhouse is cut from the rear end of the short loin, and are made up of a strip steak and filet mignon. To not strip away from its meaty goodness, this super cut of meat was dressed only with kosher salt and some fresh pepper [not usually my go-to] and grilled to perfection.
As a side, the market had some beautiful fresh corn. So seasoned with my very own homemade garlic oil, freshly grated pecorino romano and some spicy stuff [shhhh it’s a secret] and these little gems were tossed onto the grill in some aluminum foil till tender!
After grilling the steak, it took a ten minute nap and then onto the plate with its date for the evening. Juicy and succulent with the perfect grill marks, while the corn was sweet, briny and a touch spicy!
Wonder what tomorrow will bring… probably no grilling since rain is in the forecast… sigh… Well I’m sure it will be tasty!
