my inner cookie monster…

After a sweets craving, I decided to churn out a quick batch of chocolate chip cookies, but to elevate these cookies, I added in some chopped hazelnuts.
I started by creaming two sticks of butter, along with some regular sugar and brown sugar. To the mix, in went two eggs and vanilla.
While everything was mixing, in a separate bowl I added flour, baking powder, salt and some cinnamon. The dry mixture was slowly added into the mixing bowl until combined. Lastly, into the batter went the chopped hazelnuts and semi-sweet chocolate chips.
Scoopfuls of the scented batter went onto baking sheets and into the preheated oven. The fragrance of fresh baked cookies wafted throughout the entire house! After eighteen minutes, it was time to take the cookies out. Once out of the oven, a sprinkling of fleur de sel finished these gorgeous beauties…
Almost cake-like, these chocolatey and nutty cookies were the perfect end to the evening with a large glass of ice cold milk!

sweetheart dinner…

On a day when one professes their love, sends bouquets of roses and boxes of chocolate, I displayed mine with the gift of food…
Instead of a night on the town [don’t fret that is already planned], I decided on preparing a pan seared duck breast and sautéed brussel sprouts paired with an incredible bottle of red wine. To finish off this luxurious meal… homemade meyer lemon mousse topped with crushed amaretti cookies!
The duck was perfectly cooked and beautifully tender, the ‘sprouts’ crisp and full of flavor, but we all know the most important part of the meal… the dessert! The mousse was silky and seductive, each bite transported us to another realm… no denying it took some work to prepare, but it was worth every effort… [so happy I made extra]

we’re all entitled to some decadence…

To start the week off right, it was best to do it on a sweet note!
A whiskey chocolate tart topped off with luxurious, homemade whiskey whipped cream…
The tart was made using a cookbook I received as a Christmas present. I adapted it from one large tart into mini-personal sized ones.
The crust was made using shortbread cookies, sugar, salt and some melted butter. The cookies, sugar and salt are pulsed in a food processor, and then the melted butter stirred in until everything was incorporated. Pressed into the mini tart pans, the crust was cooked till just before browned…
While the crust cooled down, some milk and heavy cream were heated. Once hot, but not boiling, off the heat chopped milk and dark chocolates were whisked into the milky mixture until smooth.
In a separate bowl went some flour, an extra-large egg [plus an additional yolk] and some whiskey! Everything was beat together and then added into the chocolate mixture and whisked until combined.
The silky, chocolatey mixture was eased into the cooled shortbread crusts and popped into the oven and baked until slightly set, but wiggly in the center.
To finish this story, a hefty dollop of the homemade whipped cream and it was time to begin eating! Rich and decadent, full of chocolatey goodness… this was truly a spectacular dessert!

nuts about these cookies!!

Tonight I felt like something a bit sweet, so I decided to crank out some pignoli cookies using an old family recipe…
For something that may seem intimidating, the recipe is actually quite simple to follow! Almond paste, confectioners sugar, egg whites, salt, honey, cinnamon and pine nuts all make up these mounds of delight…
After following the recipe, piping these little guys out and baking them off, all that was left was to EAT, EAT, EAT!!!
These cookies were wonderfully light, and crisp with beautifully chewy-centers… I always remember these cookies from when I was little and now I know why!!

who says you can’t have both??

Tonight in celebration of the upcoming holiday week, I decided to do a classic, no-frills American dessert with a bit of volume turned up… ice cream sandwiches!!
Rather than a traditional and somewhat expected vanilla ice cream wedged in between two flimsy cake-like cookies, I opted for more of a cookie-on-cookie action… that’s right a crushed Oreo cookie ice cream slammed between two delightful chocolate chunk cookies. Mmmm two of my favorites in one dessert!! The sheer taste of freshly baked cookies with chunky chocolate chips revealed a true creamy surprise of a childhood favorite Oreo cookies in an ice cream form as I bit down. Sometimes the simplest combinations make the best flavors.

an unforgettable day!

Today was a fun-filled holiday! Celebrated with great friends at a BBQ chock-full of wonderful food and drink. Burgers, hot dogs, chips and dip, along with salad on a skewer [awesome concept right!] Everything was delightfully delectable.
As dessert came upon us, there was a blackout cake, along with patriotic inspired cookies! To wash everything down, apple pie flavored shots and mudslides… YUM!
What an exciting, not to mention delicious day we experienced!
