one [roasting pan] wonder…

After a long day of running errands and battling the cold weather, it was home to prep up something for a scrumptious dinner! I needed something satisfying and filling, while not taking hours and hours to prepare. Simple enough was one of my fave dishes, from one of my fave home-cooks… Nigella Lawson. It was a chicken, chorizo and potato ‘bake’. This dish is literally a ‘one pot’, rather ‘one pan’ meal! Simple ingredients that everyone has in their kitchen pantry and can be put together in mere minutes.
Into a deep roasting pan went some good extra virgin which coated both sides of a healthy portion of chicken thighs, chopped up fresh chorizo, large diced red onion and cubed yukon gold potatoes! A sprinkling of dried oregano, a scatter of salt, a grating of the zest of a clementine and it was into the oven on 425 for one hour. As the ‘bake’ cooked in the russet beauty from the oil and chorizo, the scent of oregano, citrus and spices wafted throughout.
After the cooking time was up, out appeared a bronzed, crisp chicken, seductively aromatic chorizo, browned potatoes and wilted red onion. No sooner did I take this breathtaking beauty out of the oven, that we were plated up and diving in!
This is one of my go-to recipes, and chances are if you try this it will become one of yours as well!

dining in… on takeout!!

After a battle with mosquitos, I said the hell with cooking! My decision was some delicious Chinese takeout and a fantastic bottle of wine. Once in a while you just have to indulge, plus it’s game night anyway so what better way to enjoy? Boneless spareribs, über-spicy sesame chicken and perfectly seasoned fried rice… The spareribs offered a slight gingery hint, and tangy ending. The sesame chicken displayed citrus notes with incredible pokes of heat. As for the fried rice, well what can I say other than perfect balances of flavors…
The selection of wine… a delightful and delicate Sauvignon Blanc. Fruity, crisp and the perfect accompaniment to round out this meal! Thank goodness that wine fridge is filled… I may be going back for some more!

food brings the family together…

Another weekend has come and gone, well ok there are a few more hours technically. This was a wonderful weekend spent with family, last night a wonderful Italian feast and this evening take-out and catching up. The worst part of both nights you ask, that they ended too soon! It’s always so wonderful to spend time with those we love and unfortunately it’s never enough. Laughing and catching up is always a highlight and something that we wish would happen more often. Yes, our daily schedules may not always allow for consistent hangout time, but family is always forever! We are looking forward to the next adventure, whether at home or out and about, but most importantly… together…
Now onto tomorrow nights dinner, codfish oreganta! Light and flakey fish baked with a bright and flavorful breadcrumb topping. My topping is garlicky and has a beautiful and fresh citrus kick. The flavors explode in your mouth and compliment the fish beautifully!
As a side, I think glazed carrots with a spicy kick should do the trick! Maple syrup and cayenne should coat nicely and make for a wonderfully smokey and sweet supporting star.
Tomorrow’s assignment? Valentine’s Day dinner… What will it be??? Stay tuned it’s only two days away… but for now it’s time to watch ‘worst cooks in america’!
