let the festivities begin…

Excuses mean squat… Therefore rather than apologies for being absent here I’ve decided to start off with a bang…Cinco de mayo lit a fire under my… or perhaps those were the jalapeños in the quesadillas we consumed???

Anyway you slice it, dinner was simple, classic fare that satisfied the hungriest bellies… and to wash it all down… mango margaritas!

So if you’ll excuse me I have some more drinks that require some tending to and a quesadilla that needs some loving…

cinco of my own…

This cinco de mayo was just for UNO… with an under-the-weather other half, two meals were prepared… one for me and one him!
In typical fashion for cinco de mayo, what better to do than whip up something for this festive occasion. The thought of chicken fajitas topped with some homemade guacamole came to mind!
I started sautéing an onion and poblano peppers until slightly softened, but still crisp [which I then set aside]. In this same pan, I pan-fried some marinated chicken that I sliced into strips. Once cooked through, I added back in the onion and peppers, along with some black beans and gave a quick toss!
A healthy heaping of the chicken mixture went into a warmed flour tortilla, as well as some grated monterey jack cheese and guac…
To enjoy this beautiful dinner and bring everything together, a squeeze of fresh lime juice. The lime juice gave a citrusy freshness that paired perfectly with the crisp, slightly spicy poblanos and deliciously seasoned chicken…
So happy I have some leftovers for lunch tomorrow!!

cinco [margaritas] de mayo…

Being that it is ‘el cinco de mayo’ what better way to celebrate than with a fantastic blood orange margarita made with all fresh ingredients! For me, I am not a huge fan of a salted rim, but instead one lined in sugar…
To make this great drink come together… freshly squeezed lime juice, Cointreau, sugar and of course superior tequila. My tequila of choice… Avion! After a quick shake, this luxurious libation gets poured lovingly over ice and topped off with a lime wedge…
Ahhhh sweet, tart and just plain perfect. Guess I better start squeezing more limes…
