dishing it up!

So tonight I decided on a simple pasta dish for dinner…
To start this delightful meal, I sautéed some beautiful chicken sausages until nicely browned. Once these were cooked, I pulled them aside and in the same pan heated some olive oil, along with chopped garlic and crushed red pepper. After everything became fragrant, I added in a can of chickpeas that I had smashed up… this mixture simmered for a few minutes and then the sausage was added back in!
For the finale, I tossed this creamy concoction with some beautiful ribbed pasta and finished everything off with freshly grated pecorino and chopped parsley!
The flavors were fresh and vibrant, a touch spicy, but absolutely popping!
The only sad part would be that this left not much for leftovers… guess it will be a pb&j for my lunch tomorrow [not that I’m complaining]…

tonight the bird ruled this roost!

So for one of our first fall feasts, I decided what better way to dine than with a roasted farm fresh chicken!
After slicing up some carrots, onions and fennel, I gingerly rested them in the bottom of the baking dish. On top of this veggie pillow went our beautiful chicken which I seasoned generously with salt, rubbed some low calorie butter on, squeezed fresh lemon juice around and sprinkled some flecks of fresh thyme across… for a bit of added browning encouragement I drizzled some olive oil on the exterior skin!
In the cavity went the whole lemon that I squeezed around the chicken and veggies, as well as a bundle of fresh thyme. Into the oven for roughly an hour and a half, then a quick after cooking rest and it was time to eat up!
Served alongside some velvety yukon gold mash, this meal reminded me of how much I enjoy the wondrous cooking we can all experience when fall hits, there is a slight chill in the air and our Sundays are just filled with relaxation…

rollin’ with the flavor… AGAIN!

Tonight’s dinner was a fun favorite that usually is ordered as part of take-out Chinese, but this evenings nosh was served up from scratch.
The all mighty egg-roll, the perfect mix of hearty veggies and chicken encased in a crunchy shell.
The ingredients were simple… red onion, red pepper, celery, garlic and ginger, shredded carrots and savoy cabbage, chunks of seasoned chicken and creamy sliced avocado.
After a quick sauté of the red onion, celery and red pepper, I tossed in the ginger and garlic until incorporated, then cooked the chicken alongside everything! Once cooked, I mixed in soy sauce and sesame oil to taste…
Once this fragrant combo was done, they were sealed up snuggly in egg-roll wrappers… One little bit of advice, don’t over stuff the egg-roll, otherwise you will have cracks and it won’t hold together when frying.
After a quick fry just to get that beautiful golden outside and it was time to eat!

a pre-Fall feast…

Today was a cooler day… almost preparing us for the arrival of fall this coming Saturday!
What better to do than prepare a comforting dish for dinner that would satiate both the stomach and palate.
Chicken sautéed in a mascarpone marsala cream sauce… chunks of chicken breast, diced onion, sliced mushrooms, garlic, marsala wine and mascarpone were some of the delightful supporting actors in this simple, yet satisfying meal!
The sauce was creamy and almost sweet, while the mushrooms offered an earthiness and the chicken, a wholesome and warming element!
Hmmmm… I think Fall meals are in full effect…

the only reuben i care to know…

On this chilly day, I had a craving for something toasty and hearty.
Chicken was defrosting so I decided to add a twist to one of my favorites and make the ultimate reuben sandwich, but rather than sliced turkey or corned beef I opted for grilled chicken to represent the protein. All the expected elements made an appearance, sauerkraut, swiss cheese, russian dressing (homemade!) and crunchy sourdough bread sliced just thick enough so it gets its crunch on!
Once this bad boy was stacked up it went into the press to mix and mingle. Cheese dripped and oozed from the sides, while the intensity of the sauerkraut flavor grew as it warmed…
Once done, I plated this gem and had my way with it. What can I say I don’t waste time!!!!

far east… far out taste!!

What a better way to spend our Saturday evening, but with great friends and Asian fusion cuisine!
The restaurant was upbeat and stylish, the waitstaff friendly and very knowledgable about all the dishes on the menu.
To start things off, we all shared a number of different appetizer dishes. Cold sesame noodle salad, tempura crab cakes, fire cracker shrimp, beef satay, steamed dumplings and lastly a chicken lettuce wrap. WOW talk about options and amazing flavors.
For dinner I treated myself to my all time favorite dish, sesame chicken, but with my usual extra spicy kick! It arrived hot and crispy with just enough sweetness to offset the heat. Served with the best brown rice dish I have tasted in a long time. Not your ordinary brown rice… It’s nuttier and more rustic, a perfect paring against my dinner. Glad I took home some leftovers… now I can dream the night away knowing that my leftovers are waiting patiently till tomorrow at noon. Yum!

mexican flair…

Gosh I’m stuffed!! Tonight we went out for dinner and hit up one of our favorite Mexican restaurants. It is truly a hidden gem, that in recent times is becoming more and more visited.
We started off with a trio of fantastic appetizers… guacamole of course being one [I love the version they offer here], nachos [not served in the style many are used to] and an order of chicken quesadillas. Every bite was breathtaking and so eye-catching that I realized as I was stuffing my face that I forgot to get a full plate photo!! [forgive the close ups of the guac and quesadillas following]…
Onto dinner we went [I think we surprised the server when we ordered this course since the appetizers alone could have fed quite a few]… one dish was a skirt steak served in an adobo sauce, along with rice, refried beans and flour tortillas; the second dish was fried steak with onions served alongside black beans and rice…
The flavors were amazing and I honestly do not know how I was able to complete the entire dish, but then again I have never been one to back down from anything [meals included]!!

gettin’ my grill-on!!

So today I decided early on in the spirit of summer officially starting tomorrow [just couldn’t wait till tomorrow], I was going to make barbecued chicken with homemade potato salad…
I marinated the chicken [which I had the butcher de-bone but leave the skin on], in a bourbon barbecue sauce for a good long time… The sauce was a touch smokey with a wonderful rich sweetness. Onto the grill till cooked and then set to rest and recoup their juices… It would soon be time to plate and dig in, but this barbecue chicken dinner wouldn’t be complete without my homemade potato salad.
For the potato salad it’s super simple… diced potatoes, shredded carrots, chopped celery and onion, good mayo, salt and pepper [and perhaps something special to add a little extra kick]. I made this salad early on in the day to let the flavors all marry together.
Wow what a meal… succulent barbecued chicken that had the perfect spices and flavors paired with a creamy delightful potato salad [as well as a fantastic white wine]…

spicy… just like me!

Tonight was a throw things together kinda night… so some onions, yukon gold potatoes, hot cherry peppers [of course in their tangy, yummy, vinegary juices], chicken sausage and chicken breast made one hell of a meal!
Started by sautéing an onion and diced potatoes with crushed red pepper, then I added the sausage and cooked till a bit browned, next the chicken and a bit of wine to help make everyone smile! A few guzzles of chicken stock and a stir we were in business! I put a lid on it and after simmering for a bit, added the cherry peppers and some juice for extra heat and flavor! The final dish was tangy, vinegary and spicy, and completely delicious…
If I wasn’t trying to curb the amount of carbs we are intaking, some crusty bread for sopping would have been VERY welcomed! Maybe next time…

Closing time…

Another outrageous evening for dinner! We closed that joint down… LITERALLY! Time really does fly when you are chatting away and enjoying yourself.
As an appetizer, we did a family-style setup. Fried calamari tossed in a balsamic glaze [AMAZING], sautéed shrimp in a spicy lemon butter sauce, as well as a hearty vibrant arugula salad with pears, Parmesan shavings and candied pecans! All delicious and different in their own special ways.
As mains; a spicy chicken arabiata with hot peppers in their vinegary goodness, grilled flank steak topped with shrimp, grilled sea bass and an always classic chicken marsala! Everything was delicious as our table went quiet as we savored each luscious bite…
For dessert… we all shared a peanut butter tartufo. One word… DIVINE! Silky and smooth, creamy and a slight bit salty. I need another right about now! Well maybe I can try and make one soon… hmmmm
