green with envy!!

Tonight I was craving something I haven’t had in what feels like ages… broccoli rabe!! Beautifully green and full of garlicky delight. Instead of making this into a side dish, this played a major, money-making roll in bringing dinner to an exciting level…
A semolina loaf was the capsule that held a tender, crispy chicken cutlet married with the brilliant, tender broccoli rabe and warm, milky just made fresh mozzarella from my favorite Italian specialty food store…
Everything was built lovingly and picture perfect to resemble a hearty sandwich you would expect to have served at a great sandwich shop! Lucky for me this sandwich shop serves wine!!

Wilted and wonderful!

Tonight was a quick, but delicious meal. Oven baked chicken cutlets served alongside a wilted romaine salad tossed with rendered pancetta and sweet cherry tomatoes!
The salad was salty from the pancetta and sweet from the cherry tomatoes, with a slight crunch left from just a quick sauté of the romaine. For the chicken, well thats simple… eggs, breadcrumbs and an oven.

light Italian fare…

To kick off the holiday weekend, we celebrated with a great bottle of wine and a full-on Italian dinner at one of our favorite restos!!
I decided on a golden, pan-fried chicken cutlet topped with peppery baby arugula, sweet chopped tomatoes and red peppers, along with milky diced fresh mozz.
The flavors all married together beautifully and made me wish I had a big enough belly to finish off the entire plate, but the good thing is the leftovers will make for an exceptional lunch…

Blinked and it was gone…

Ooops, the breaded chicken cutlet with broccoli rabe that I made for dinner never made it to the plate [or got its close-up]. I literally picked at everything while cooking, and didn’t do an actual sit-down dinner because I at that point was stuffed! What I can say about everything is… YUM! The tender chicken was nicely complimented with a bright kick from the broccoli rabe. I love simple and easy, yet delicious meals!

chicken [cut]lets above the rest…

So on the menu for tonight’s dinner was breaded chicken cutlet topped with eggplant marinated in balsamic vinegar and roasted red peppers. To accompany this dish, lightly grilled yellow and green squash with chopped fresh mozzarella tossed in a homemade vinaigrette. This bright, vinegary and refreshing meal was a winner in my book! The cutlets perfectly breaded and flavored, while the squash offered a wonderful, almost sweet balance. The vibrant colors and flavors that were plated made me realize how close spring really is now, and that I cannot wait for its arrival. The idea of being able to create light fare in no time that is full of flavor just makes me so excited.
