Tonight was a quick, but delicious meal. Oven baked chicken cutlets served alongside a wilted romaine salad tossed with rendered pancetta and sweet cherry tomatoes!
The salad was salty from the pancetta and sweet from the cherry tomatoes, with a slight crunch left from just a quick sauté of the romaine. For the chicken, well thats simple… eggs, breadcrumbs and an oven.
