A ‘paw’fect cake for our pup!

Today is a special day in our household… We get to celebrate our little guys’ 15th birthday! The apple of our eyes and the one who always makes us smile.
There was no better way to celebrate him on his special day, than with a beautiful homemade decorated cake created just for him [ok ok and some for us and his little brother]… So with that said, it’s time to don our birthday hats and sing an all to familiar tune…

birthday bonanza!

What better way to end a week than with a birthday celebration! This wasn’t just any birthday, but rather one for our little, well I guess not so little nine-year old pup…
No birthday would be complete without a vanilla cake baked from scratch and filled with a glorious vanilla custard between the layers… Topping off this towering delight, a light buttercream frosting [this was for the adults though, plain for the pups]!
After a little singing, blowing out candles, photo-ops including birthday hats and the opening of presents, it was then time to cut into the cake. The birthday boy and his brother both got to enjoy some cake, while we did as well, but also had cleanup duties…

what are you bananas!!

With a few bananas remaining from the cake I made this past weekend, I decided rather than tossing then out they’d do better mashed up into a wonderful banana bread! This wasn’t just any banana bread, but rather a boozy banana bread…
I soaked sweet little golden raisins in some delicious bourbon. Once plumped up and juicy, they went into my batter that was full of the mashed bananas, chopped pecans, vanilla, two eggs, one cup of flour, two teaspoons of baking powder, a half teaspoon of baking soda and salt, one stick of melted butter and sugar.
Once everything was combined, it was into a loaf pan and then off for a nap for fifty minutes on 325. After a quick test for complete doneness, I had to taste! There was very little willpower, but tasting this freshly baked beauty was a necessity. Served up with some vanilla-infused mascarpone made this luxurious delight even more spectacular!
The boozy raisins offered a wonderful addition to the sweetness of the bananas. This definitely will be on my breakfast menu tomorrow!

sunday night sweet tooth!!

To end the weekend on a sweet note, I thought a luxurious, slightly dense cake was in order! This was not just any cake, but rather a family favorite and old recipe passed down…
The cake has an interesting array of ingredients, including both pineapple and bananas, and is filled in/topped off with a silky cream cheese frosting coated in toasted coconut that just exudes sensuality.
Once it was ready to slice into and eat, the vision of heaven glimmered across the plates! With each bite of the cake, the desire to eat more and more became apparent… this was not going to be just a single slice of heaven, but rather the following day… a whipping on the treadmill!

we let her eat cake…

For a birthday celebration this past weekend, the birthday girl was surrounded by her family and was able to enjoy delicious foods and company!
Many delightful dishes graced the table and everyone enjoyed themselves fully, but then it was that time… yes the time that makes everyone cringe… the cake! We all know too well that when the cake comes out, so does the dreaded birthday song, but like a trooper the birthday girl just blushed and accepted it. The cake was our present to her… a moist and delicious three layered chocolate cake with a salted caramel icing/filling!
She blew out her candles… even though there were only two, that was satisfactory and they did their part. Wonder what she wished for…

here’s to satisfying that sweet tooth!

As a special after-dinner treat, I thought why waste those calories on a piece of cake or a crumbly cookie… instead why not just delve into the seductive and lethal world of a martini!
This isn’t just an ordinary martini though, rather a rich and silky concoction that with each sip offered the ability to breakdown those barriers and be a little naughty…
Godiva chocolate liqueur, hazlenut liqueur, creme de cacao and vodka all go into a shaker with just a bit of ice. Really go at it and whip that drink up in there, and what pours out… a frothy, velvety smooth little devil! To top off, some simple shavings of dark chocolate…
Sipped slowly, but enjoyed fully this sexy little libation should come with a warning label…

***instead of the chocolate shavings, you can play around and rim the glass with some chopped hazelnuts and sugar***

this cake is the ‘apple of my eye’…

After a wonderful early morning trip to the apple orchard, we came home in tow with three massive pumpkins, some minis, along with an abundance of different apples!! Jonagold, Honeycrisp, Macoun and Senshu were those that caught our eye and were placed into our baskets…
What better to do than snack on one on the drive back home… the Honeycrisp obviously won out, while the juiciness from each bite was reflected down our cheeks and in some spots on our jackets! That however is the fun of it all.
Once back home, there was absolutely zero hesitation; baking was about to occur… The island was prepped, the pan was greased and yes it was time!
The flour, sugar, salt, eggs, vanilla, cinnamon and oil were combined, then gently folded into the wondrously fragrant batter, the stars of this cake… a mix of those freshly picked apples which were peeled and diced up!
The batter was eased into the greased pan and thrown into the preheated oven… after baking for a little over an hour it was cooling time.
Now this moist and flavorful [ok so I snuck a tiny piece from the inside] cake will tease us until a real slice is enjoyed later!
I just don’t know how we will be able to wait till tonight for a real piece??

a reason to celebrate!

After a long and tiring day, it was time to sit and unwind! Relaxation was short lived though, since a birthday celebration was on this evenings agenda…
To make this birthday special there were hats, presents and of course… CAKE!! Well more like cupcakes.
A moist, fluffy vanilla cake with thick buttercream frosting covered in sprinkles had the birthday boy unable to control his excitement…
It was amazing that he shared any with the rest of us!

an unforgettable day!

Today was a fun-filled holiday! Celebrated with great friends at a BBQ chock-full of wonderful food and drink. Burgers, hot dogs, chips and dip, along with salad on a skewer [awesome concept right!] Everything was delightfully delectable.
As dessert came upon us, there was a blackout cake, along with patriotic inspired cookies! To wash everything down, apple pie flavored shots and mudslides… YUM!
What an exciting, not to mention delicious day we experienced!

must have been the luck of the Irish…

So today we were invited to a post-St. Patrick’s Day party. I thought to myself what would be something that I could bring to the festivities… after weighing all options the idea of making a fun holiday related cake popped into mind! So with that my journey began. Vibrant green and snow white fondant, a homemade buttercream frosting, as well as a light and airy vanilla cake.
I started by making the cake in a shamrock styled cake pan! Once baked, I let it cool completely on a rack [overnight in fact]. This morning, I made my buttercream frosting… butter, confectioners sugar, milk and vanilla. Whipped that buttercream frosting until it was thick and luxurious! I began to ice the cooled cake as a layer between the cake and the fondant that was going to be molded over. After icing, into the refrigerator to quickly chill and then started to roll out my green fondant. Working quickly, I rolled the fondant on top of the cake and began the process of molding out the shape based on the grooves. Once the fondant took shape, I lined the entire cake base with a strip of the white fondant and then did little shamrock cutouts to adorn and create a finished masterpiece!
It then was into the car for the careful ride to the party! The cake was a huge success at the party and everyone loved it from decoration down to taste.
All in all, for a first time attempt at this type of baking project, I think it’s came out pretty good… hmmm what’s the next holiday??
