this meal really ‘stacked’ up…

After a serious craving for Italian food, I decided to do a deconstructed version of eggplant parmigiana for dinner…
Freestanding layers of crispy, breaded eggplant, slivers of melted fresh mozzarella, homemade sauce and sweet fresh basil leaves made this dish memorable [not to mention super flavorful]…

last years dinner is this new years day delight…

After preparing food for a New Years Eve party last night, I realized there was quite a bit of extra remaining… So what else would be for dinner tonight then some fantastic leftovers…
Chicken rollatini and stuffed artichokes were just one of the vast edibles that made our New Years Eve bright, while also illuminating the culinary path for tonight’s dinner!
The chicken rollatini were succulent, lightly breaded cylinders, stuffed full of amazing flavors. The beautiful, pointy artichokes were buttery and tender, with each leaf begging to be cleaned gently…
With each sensual bite, we were yet again transported back to that spectacular evening we shared last night!

a hot pot I can warm up to!

After a day of Halloween preparation, whipping up dinner was just not in the cards… instead a serious craving for sushi was!
So we pulled a nice bottle of wine out of our wine fridge, hopped in our car and off we went!
Upon arriving at the restaurant, we were immediately greeted by a hostess and whisked to our seats… The decor was modern and very enticing. One if the most unique elements that we noticed was a conveyor belt of sorts which trailed sampler sizes of sushi, sashimi and other appetizing little pleasures! You picked what intrigued you and paid based on the plate design…
Tonight instead of selecting from the belt, we ordered some well known appetizers [Negimaki and Harumaki], along with some sushi. In addition, we tried a ‘hot bowl’ as a main as well!
This ‘hot bowl’ was absolutely mind-blowing… seasoned rice on the bottom layered with a sliced breaded pork cutlet, topped off with a raw egg which cooks from the heat of this ‘hot bowl’… this was like nothing I have ever experienced, but have to say may have quickly become one of my new favorites!
It’s been a while since we’ve ventured out for sushi, but this may have been the night that changed it all again…

green with envy!!

Tonight I was craving something I haven’t had in what feels like ages… broccoli rabe!! Beautifully green and full of garlicky delight. Instead of making this into a side dish, this played a major, money-making roll in bringing dinner to an exciting level…
A semolina loaf was the capsule that held a tender, crispy chicken cutlet married with the brilliant, tender broccoli rabe and warm, milky just made fresh mozzarella from my favorite Italian specialty food store…
Everything was built lovingly and picture perfect to resemble a hearty sandwich you would expect to have served at a great sandwich shop! Lucky for me this sandwich shop serves wine!!
