combo meal in one…

Who says you can’t have your pizza and salad, and eat it too! Tonight I was craving a simple chopped salad full of walnuts, cranberries and pungent blue cheese chunks, but at the same time I really wanted pizza! So I thought why not take those two cravings and marry them into a pizza salad! The hot thin crust with a light touch of sauce became the bed for my luscious salad, and as soon as I took the first bite I knew leftovers were not in my future… and boy oh boy was I right, other than the few crumbs left on my plate it was clear this dish was mine and only mine.

it’s true… EVERYTHING is better with bacon!!

So as promised, what better way to celebrate ‘International Bacon Day’ than a great tasty appetizer to have before dinner tonight… I whipped up my uber-famous bacon wrapped dates! Stuffed with blue cheese and tightly wrapped with a slice of thick cut applewood smoked bacon and we were in business. Into the pre-heated oven for about twenty-five minutes and out came perfectly cooked dates! To finish these gorgeous little packages… a drizzle of good maple syrup to drive the whole story home. Oozy blue cheese, crisp salty bacon and sweet dates were perfectly paired with a crisp bottle of Albariño…
Unfortunately I couldn’t leave well enough alone… it is a special day today and I needed to pay further homage to this luxurious sliver of porky goodness! As I looked around my kitchen, out popped beautiful white-fleshed nectarines. So I thought what the hell, and tightly wrapped these bad boys with some bacon and tossed them into the oven. Cooked until the bacon was crisp and the fruit slightly softened [but still retaining its shape] and it was time to chomp down. Sweet and salty… crisp, warm and just soft enough to practically melt in our mouths!
Hmmmm why isn’t there a bacon holiday once a month???

a celebration for B-A-C-O-N

In honor of one of my favorite proteins… let’s celebrate everything bacon in observance of ‘International Bacon Day’
As most of you have read, when possible I will find a way to incorporate the flavor and yumminess that is bacon in my dishes. So I thought it would be fun to ask you all to e-mail me a brief paragraph and possibly a picture of YOUR favorite way of using bacon. It could be as simple as an add on to an existing dish or a delish way of using bacon as the star in your favorite dish. For example tonight, I am going to make one of my favorite bacon appetizers, ‘bacon wrapped dates’ this dish is so simple to make and explodes with flavor in your mouth with every bite full. Simply cut open dried dates, remove the pit, fill the cavity with your choice of blue cheese and then wrap that beauty with a strip of bacon and use a tooth pick to secure it.
After a bit of a chill in the fridge, you can either deep fry each package or simply put them in the oven to crisp up. Talk about rich and flavorful… you can’t eat just one!

The kinda ‘blue’ I like…

So after a long, but beautiful day spent out galavanting and antiquing the decision of dinner of course reared it’s head our way… Do we go out or sear something up on the grill?? Well the thought of going back out was not on my list of wants, but neither was take-out… An easy decision was burgers that I had prepped and froze earlier using meat I purchased from LaFrieda meats!
Onto the grill and cooked till the perfect doneness, topped with some chunky picante blue cheese, applewood smoked bacon and rested lovingly onto a vibrant and bitter radicchio leaf… ahhhh that hit the spot! To accompany this delightful burger, kettle cooked chips and an ice cold beer… I can taste summer already!

Spiraling out of control!!

Grilled spiral sausage with sautéed onions and peppers made its way onto our plates tonight! What was a pretty decent afternoon in terms of weather sort of dictated the idea of grilling, but as the sun started to turn in for bed the chill came back out to play… YIKES! Well I’ve grilled in colder weather so why change plans?? The smokey smell as the spiral sausage grilled away just let me know what we were in store for when it was time to dive in. The peppers and onions paired well with the parsley and cheese spiral sausage. Vibrant flavors gave the dish a wonderful edge!
As a nice refreshing and crisp side dish, I decided a fresh romaine salad tossed with sweet cherry tomatoes from the farm, finely diced red onion, diced fire roasted red peppers and cubed fresh mozz. Everything was mixed around gently in a homemade blue cheese dressing. Creamy, tangy and crunchy, as well as sweet and slightly acidic…
I just love Sunday dinner!
