Sunday never tasted so good!

It’s been a while since we’ve had a proper Sunday supper… With snow on the ground and the perfect winter chill in the air, I thought something braised was the key!
Everything started by generously salting a bone-in pork butt and then browning it in some extra virgin. As soon as the pork was browned on all sides, I set it aside and in went sliced onions and celery until softened and fragrant. Once close to transparent, in went a good handful of minced garlic, bay leaves, fresh thyme, along with a big drink of Saba and homemade stock to let the pork swim in.
The lid to my cast iron pot went on and it was off to bake in the oven at 375 for two hours, which felt like days, as the scent of sweet, acidic goodness wafted throughout the entire.
To serve, slices of the pork were dazzled by the grape-like, onion syrup. Each bite was like cutting through butter and made it terribly difficult to not sop every morsel with some crusty bread! The few leftovers remaining are going to make a killer lunch sandwich tomorrow.

crispy, juicy and HOT!!!

Sunday suppers seem to creep upon us quicker than ever, almost as quick as summer has passed by…
Tonight, an incredible classic dish needed to make an appearance on our table… classic fried chicken! This dish was a do-ahead however.
After breaking down the chicken into manageable pieces, they were brined overnight. Today they were dipped into a buttermilk concoction and then dusted in a flavorful, spicy flour mixture.
Cooked in a fragrant herb and garlic infused oil, these previously boring beauties turned into sultry goddesses.
Once golden and crisp [and of course cooked through], a tower of divine luxury was built on a plate then decorated and spritzed with wedges of lemon.
Each crunchy bite brought back memories of childhood when my mother would spend hours in the kitchen preparing the ultimate and perhaps most intoxicating fried chicken… she taught me well!

light and filling…

As summer starts to dig its heels into long hot days, I thought a light dinner was in order. A simple, delicious mix of fresh multi-grain bread that I toasted was decorated with slivers of creamy avocado, sharp cheddar, sliced chicken breast, ripe red tomatoes and a touch of mayo. It may sound simplistic, but every last bite was filled with flavors that screamed summer is hear to stay… And you know what, I’m ok with that.

B-L-Totally Awesome!

So this past holiday weekend was a full-on baking extravaganza, chock full of bread loaves, buns and crumbles… The loaves and buns were whipped up using one of my favorite British cookbooks.
Since there was an abundance of homemade Sherston loaves in the house, I decided to slice up some heavenly chunks and do classic BLT’s for dinner!
After toasting up these lovely slices, a smear of mayo acted as the glue for building up these hearty sandwiches! Thick rings of juicy red tomatoes, crisp and cool leaves of romaine, along with salty, applewood smoked bacon brought this masterpiece together…
The juicy tomatoes oozed their gorgeous, sweet nectar and dripped down my lips as I savored each and every bite! Since one sandwich disappeared so suddenly, I am not embarrassed to say that an additional BLT made its way onto my plate and then into my belly…

sunday night sweet tooth!!

To end the weekend on a sweet note, I thought a luxurious, slightly dense cake was in order! This was not just any cake, but rather a family favorite and old recipe passed down…
The cake has an interesting array of ingredients, including both pineapple and bananas, and is filled in/topped off with a silky cream cheese frosting coated in toasted coconut that just exudes sensuality.
Once it was ready to slice into and eat, the vision of heaven glimmered across the plates! With each bite of the cake, the desire to eat more and more became apparent… this was not going to be just a single slice of heaven, but rather the following day… a whipping on the treadmill!

nothing to ‘wine’ about here… it’s all good!

After a long day of finalizing Halloween decorating, the only thing I could muster up the willpower to do for dinner was crack open a nice bottle of Sauvignon Blanc, sit down with some cheese [direct from Sicily], a warmed loaf of bread and call it a night.
The slightly salty and sharp bite from the cheese was a fantastic compliment to the crisp, almost fruity wine…
What a wonderful meal this turned out to be, and with absolutely no effort… just complete satisfaction!

pretty in pink…

As a precursor to a delicious meal, I decided to make a nice, delicate little appetizer to enjoy…
I gently sliced pink pearl apples, which are sweet and slightly tart. They have a gorgeous vibrant pink flesh and are available sparingly in one of my favorite gourmet markets for a very brief timeframe so I had to get my hands on some!!
These slices of beauty were layered on a grilled slice of sourdough bread, followed by some applewood smoked bacon, arugula and topped with extra sharp cheddar. Under the broiler for just a moment until melted and bubbly and it was time to slice into and devour!
Salty, crunchy, tart and sweet… a perfect combination in a perfect bite!!

Summer and sandwiches…

What better way to enjoy a hot summery afternoon than with a meaty delicious Italian classic sandwich…
Full of Italian ham, salami, provolone, shredded lettuce, sliced red onion and doused with a flavorful oil and vinegar dressing all tucked into a fresh baked roll!
The sandwich was crunchy from the lettuce and red onion, tangy courtesy of the dressing, slightly sweet from the ham with a complimenting bite from the sharp provolone.
Normally I cannot finish an entire sandwich, but there was no way I was letting this one slip by… it had no chance!
