Chewy [spicy] treats…

So with a snowy, wintry day upon us it was yet another perfect day to do some baking!
On today’s baking sheet… soft ginger cookies with pieces of crystallized ginger baked in. A simple cookie mixture that created a beautiful cracked, vintage looking edible.
This whole batch began by sifting flour, baking soda, salt, ground ginger, cinnamon, cloves and nutmeg in a large bowl. In a separate bowl, canola oil, molasses, dark brown sugar and one extra large egg were mixed together. Once combined, the flour was added into the wet ingredients. After folding in the crystallized ginger, scoops of the dough were rolled out in turbinado sugar, lightly flattened and baked until cracked and gorgeous.
Chewy, spicy and a perfect pairing with a cup of tea… the best way to endure a cold winters day!

a morning of glory [muffins]…

With the last few months pretty high on the emotions chart, it was a bit difficult to focus on much… Things are finally starting to ease back into normalcy and I thought was better to do than whip up a hearty batch of morning glory muffins for breakfast!
I had these luxurious little delights out in East Hampton and have been completely addicted since.
Chock-full-of delicious ingredients, these little domes of beauty are simple to prepare and the flavor element is incredible! For the recipe, two cups of flour, one cup of brown sugar, two teaspoons of baking soda and cinnamon, a half teaspoon of ground ginger and kosher salt are sifted and combined into a large bowl; in a separate bowl, three eggs, good vanilla, two-thirds of a cup of canola oil and one-fourth cup of orange juice are whisked together. Once the wet and dry ingredients are prepped, I cored one green apple and peeled four carrots. Both the apple and carrots were grated, and along with some coconut flakes, soaked golden raisins and wheat germ stirred into the dry mixture. As soon as everything was incorporated, I gently added in the wet mixture and mixed everything until fully combined and moistened.
The batter was scooped into a muffin tin and set to bake for twenty-five minutes at 375degrees. After cooling slightly it was time to rip open these spicy scented lovelies and enjoy with a silky cup of lady grey tea…
Couldn’t think of a better way to start off a weekday morning!

Guilt-free goodness…

With a craving for something healthy, yet decadent and delicious, I turned to a recipe from a dear friend whose website is chock-full-of informative ideas on leading a healthy lifestyle…
So the apple cinnamon protein muffins were the perfect way to go! Full of healthy ingredients: oat flour, pumpkin purée [not the sweetened kind], good vanilla, cinnamon, nutmeg, kosher salt, egg whites, stevia [I ran out and used Splenda for baking], whey powder, coconut oil and crisp granny smith’s!
The process of combining everything is pretty simple and only requires some pulsating in a food processor… Apples get the first few pulses until mostly puréed, but still slightly chunky. Then everything else is added in and given a whirl until brought together!
Spread out into a non-stick sprayed muffin pan, shot into a 350* oven and roughly twenty-five minutes later little devilishly good treats emerged… minus any potential guilt! So I ate one, and then another… who knows I may be making another batch before the day ends.
***Please note if you’re seeking cake like muffins you will need to incorporate baking powder/soda***

hands off my buns!

For a nod to the upcoming Easter holiday, I decided to whip up a batch of hot cross buns… these spicy orbs of golden delight take a bit of time to prepare, but the outcome is entirely worth the effort!
The standards for creating these little heartbreakers are flour, sugar, salt, some mixed spices [pumpkin pie spice works as well], yeast, butter, an egg, whole milk, water, raisins, currants, as well as lemon and orange zest!
Everything for the dough is combined in the mixer, minus the fruits and zests… After a good ten-twelve minutes of kneading in the mixer, the fruits and zests are added in until incorporated. Once combined, a layer of plastic wrap covers the dough and it’s off for a nap in a warm spot until the dough rises in volume…
The dough, once risen, is separated and rolled into mounds, then set aside to rise again. As soon as they have risen the second time, a cross is piped along the tops of each bun and it’s off to get baking!
As soon as the buns are golden, a quick brushing of a syrupy glaze is gently slathered over each to finish off these treasures!
Warm out of the oven with a spread of butter or preserves [or hell both] is the best way to enjoy… guaranteed these don’t make it until Sunday!

my inner cookie monster…

After a sweets craving, I decided to churn out a quick batch of chocolate chip cookies, but to elevate these cookies, I added in some chopped hazelnuts.
I started by creaming two sticks of butter, along with some regular sugar and brown sugar. To the mix, in went two eggs and vanilla.
While everything was mixing, in a separate bowl I added flour, baking powder, salt and some cinnamon. The dry mixture was slowly added into the mixing bowl until combined. Lastly, into the batter went the chopped hazelnuts and semi-sweet chocolate chips.
Scoopfuls of the scented batter went onto baking sheets and into the preheated oven. The fragrance of fresh baked cookies wafted throughout the entire house! After eighteen minutes, it was time to take the cookies out. Once out of the oven, a sprinkling of fleur de sel finished these gorgeous beauties…
Almost cake-like, these chocolatey and nutty cookies were the perfect end to the evening with a large glass of ice cold milk!

taking a ‘dip’ in pure deliciousness!

After realizing that I had a few eggs that would be passing their peak, I decided to make a vanilla bean dipping sauce and a batch of insatiable fried dough!
The dipping sauce was simple, one cup of cream and one of milk [brought to a simmer], into the simmering liquid went a vanilla bean that I split and scraped…
In a separate bowl went four egg yolks and one-fourth cups of sugar. This was whisked until a pale yellow color. The simmering liquid mixture was then slowly added into the egg mixture while constantly whisking.
Once the mixture was incorporated, it was back onto the heat and constantly stirred until slightly thickened. Off the heat a half teaspoon of bourbon was whisked in…
The mixture was set aside to cool until it met its fluffy and golden counterparts…
Dip… bite… dip… bite… this could have went on forever!

a bit sweet, a bit tart… hmmm just like me!!!

Today was a perfect day to whip up a batch of homemade granola… there was that perfect fall chill in the air and the thought of making something comforting that could be picked at by hand, a crunchy element for a yogurt at breakfast or even a healthier substitute for a dessert crumble topping!
It’s a pretty simple concept… oats, wheat germ, slivered almonds and coconut are mixed with canola oil and honey. Everything is tossed into a 350 degree range for thirty-five to forty-five minutes [depending on your range] tossing frequently to prevent burning. Once a beautiful brownish toasty color is achieved, it’s off to cool and some yummy dried fruits get added to give this granola some extra oomph… you can really use any dried fruits you prefer, but this time I just used cranberries, cherries and calimyrna figs!
The flavors are slightly sweet from the coconut, cherries and honey, a touch tart… courtesy of the cranberries, but all around crunchy and delicious!
Will we be able to wait until morning to dive in??? I highly doubt it!
