[rib]eye on the prize…

After a long hot day, what better way to finish it off than standing over a searing hot grill preparing fantastic, juicy ribeye steaks!
I dry rubbed my ribeye steaks yesterday with my classic rub [you can check out my earlier post on the ingredients] and let it take a long snooze till this evenings appearance… It tossed these beauties onto the searing grill for ten minutes, turning once…
As a side, baby spinach sautéed with rendered pancetta and garlic. Simple, easy and oh so flavorful!
The weather has been too perfect not to relish in outdoor cooking, plus it will prep me for the summer months that are spent poolside and having impromptu grilling sessions…

at a low simmer…
