the perfect medicine…

Per a patients request, tonight’s dinner was a homemade chicken soup… Nothing fancy went into this soup, just some standard vegetables, herbs and of course… chicken. I start by sautéing some vegetables and once cooked through I add about a quart of chicken stock and two cups of water. Once that comes to a boil, I add two decent size chicken breasts and then reduce to a simmer, cover and cook for about an hour. After an hour, I start to shred the chicken in the broth and season with some salt… After another half hour of simmering with the lid off, the soup is now ready to be served… This soup is wonderful on a chilly day served with some crusty bread, but even better when you’re feeling a little under the weather… If you feel like some heat, a few dashes of hot sauce offers that perfect kick…
