quinoa who??

Tonight was a night when I wanted to make something I find very satisfying… quinoa. This meal is very rewarding and quite truthfully filling. The surprising element to this dish is that it requires only a few ingredients: quinoa, red onion, black beans and stock [I’m sure if you have leftover grilled chicken, this could be a great opportunity to dice up and toss into the dish towards the end of the cooking process]! The meal takes all of 30-35 minutes to prepare… dice the red onion and saute in a bit of olive oil, while sauteing the red onion rinse off the quinoa. When the red onion has softened, add the stock to the pan and bring to a boil, then stir in the quinoa and bring that to a boil as well. Once boiling, cover pan with a lid and reduce heat to a simmer. Just before all of the stock has been absorbed [roughly 15-20 minutes], I add the black beans and cook just a bit longer to warm the beans through. The quinoa offers an incredible texture and nuttiness with every bite! One bowl is truly NEVER enough!
